The addition of citrus to the fish sauce based dipping sauce adds a wonderful layer of freshness to starters like the excellent vegetarian rice paper roll with crispy tofu. Love the mains! The bahn mi are wonderful with the home made pate that is spiked with fish sauce, and the chilli mayonnaise. The pho is different to those in other stores in Hong Kong. The flavour is pure and unadulterated by excessive five spice, msg or shitake like you would get at the Vietnamese restaurant chains. You can taste the beef and chicken, unlike the ones outside, which have an anonymous, dreary savoury taste that weighs down the palate. Ice creams and sorbets are wonderfully flavoured especially the Saigon Cinnamon and toasted coconut flavours. All have a silky texture given by the pacojet. The cherry and mango sorbets are superb!
