That's great choice for lunch after riding the bike from Tai Wai. The pork knuckle is cooked enough to soften the meat and release collagen from the skin. Fat is favour and the skin goes so well with a spoon of rice. The only room to improve is the rice. A bit moist than Thai steam rice.
