To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

每年九月尾到十月初都會在德國慕尼黑舉行慕尼黑啤酒節Oktoberfest,是慕尼黑一年中最盛大的活動。因為德國於十月時,正是大麥和啤酒花豐收的時節,人們在辛勤勞動過後,也來一起飲酒、跳舞,慶祝收成。香港也有不少餐廳於十月期間參與Oktoberfest,今年Ritz-Carlton The Lounge & Bar亦特別炮製了一系列Oktoberfest菜式,酒店行政總廚是來自德國,由它為客人準備各款香腸及烤豬手,就最能品嚐德國菜的原始風味。在德國,每間麵包店都有Bretzel蝴蝶餅買,大大小小,不同味道,鹹甜也有。很多人也會以為這種深啡色的麵包會很硬,但其實它表面帶點微脆,內裡鬆軟而略有韌性,口感討人喜歡。 另外還有一款麵包,同樣帶著麥香,質感就更加鬆軟。頭盤有煙燻火腿及芝士蓉,配上醃酸瓜、洋蔥及沙律菜。愛吃酸的我,當然對醃酸瓜情有獨鐘,可吃下數條,酸酸的,令人開胃。兩年前曾到德過旅遊,超喜歡吃一款白腸,吃的時候是需要把腸衣撕去才可以吃。雖然在香港沒法找到這款香腸,但今次在The Lounge & Bar的Oktoberfest Menu中也有三款自家製作的香腸,味道都不錯。Tradi

兩年前曾到德過旅遊,超喜歡吃一款白腸,吃的時候是需要把腸衣撕去才可以吃。雖然在香港沒法找到這款香腸,但今次在The Lounge & Bar的Oktoberfest Menu中也有三款自家製作的香腸,味道都不錯。Traditional Munich White Sausage,served with Sweet Haendel Meier Mustard and Laguen Roll,$148,短小肥胖的白腸肉味比想像中較濃,於熱水煮熟後,再沾上特別從德國運來的芥末醬,不會太鹹,也吃到肉香。

Original Thüringer Sausage,$168,這兩條較長及幼身的香腸,口感比Munich White Sausage多點咬口,肉味亦相對較濃。

第三款Roasted Nuernberger Sausage,$148,一客六條細紐倫堡香腸,是味道最濃郁的,肉味雖濃,卻不感覺到很鹹,吃起來別有一番滋味。香腸都配上德國酸椰菜及烤薯仔,吃起來也很飽。

除了香腸,德國烤豬手都不能缺少,Oven-Roasted Pork Knuckle,served with Sour Cabbage,Potatoes and Laugen Bretzel,$228。巨大的豬手皮烤得脆口,咬下聽到脆裂聲,皮下有點脂肪,但吃起來不會很油膩,加上肉質保持嫩而不乾,還有味道不過鹹,很有水準。雖然一隻份量不少,但也被我們吃清。

最後甜品是Black Forest Cake,$98,香濃而稠滑的朱古力慕絲夾著不少櫻桃粒,櫻桃經過酒浸醃,酒味十分濃烈,但質感仍然保持硬實。先吃了一粒放在蛋糕旁的櫻桃,酒香流於口中及喉嚨不散,再吃口濃郁的朱古力蛋糕,味道得以中和。
