Amuse-Bouche
率先華麗出場有4個開胃小食:
・粟米撻
・泰式柚子沙律配北海道帶子
・煙熏油甘魚
・芋頭泡芙

> 職員解釋這道菜靈感來自泰國生蝦,主廚以熟蝦代之、並以炒過的糯米提煉出精華油和米粉作調味,和用上幾種特色泰國香草提升蝦肉鮮味;伴碟的紅色雪葩是紅菜頭撈了泰式海鮮醬,味道清爽帶辣

Oyster, Thai Sichuan Pepper, Northern Spice

> 這款是熟食日本生蠔配搭豬血,用咗四川花椒拌焦香奶油和辣椒油調味,濃郁海水味的蠔肉鹹鮮中滲出點點麻辣

Grouper, Thai Kale, Choo Chee Curry

> 這道魚鮮賣相很有立鱗燒的影子。馬友魚以泰式紅咖哩Choo Chee入饌、配搭泰國空運的羽衣甘藍烤熟、魚鱗香脆肉質鮮美。旁邊的免治豬肉球竟然用了4種不同的雨衣甘藍去炸、考功夫之作!味道香濃不膩

Crab, Mushroom, Homemade Siracha

> 主廚用自家製“是拉差辣椒醬”炒日本蟹肉放在用蘑菇炒成的飯上面,旁邊伴以3種特色醬分別是蟹膏、黑橄欖醬和是拉差醬,職員建議每啖飯單獨配1款醬去試真個味,個人最喜歡鮮濃蟹膏又香又滑

Australian Wagyu, Fennel, Holy Basil

> 主菜是澳洲M8和牛,油脂豐富細密、油花分佈平均牛味香濃入口即融很高質!發覺大廚很喜歡用果凍伴碟、今次用了茴香片和羅勒、日曬紅酒汁造成的果凍,味道清新煥發。伴碟有新鮮火龍果肉和橙汁葡萄乾以及洛神花雪葩,色彩瑰麗養眼味道清甜清爽

> 朋友見我食到意猶未盡、提議加多道大廚的招牌菜烤龍蝦,老實不客氣的我卻之不恭🤭!果然名不虛傳!澳洲龍蝦size巨型、蝦面淋上以大頭蝦膏冬蔭功醬煮成的汁,釀入義大利飯,risotto用魷魚乾、生蝦醬煮混入五花肉、新鮮辣椒、青芒果肉加雞湯煮成,唧啲青檸汁更有畫龍點睛之效,龍蝦肉超級爽脆香烤味濃,飯粒咬口正宗意式風味,味道鮮香層次感豐

Mango, Sticky Rice, Lemon

> 甜品造型都係美輪美奐。呢個係芒果糯米飯嘅變奏版本,由黑糯米同鹹椰子cream造成的基底蛋糕,配搭泰國新鮮芒果肉、焦糖腰果,上面放入檸檬醬、綠豆製成的慕絲,旁邊的芒果雪糕也是用了泰國芒果肉,整體味道好清甜refreshing

Petit Four

> 四款精緻甜點:鮮豔澄紅的是甜木瓜,以及椰奶南瓜糕、紅豆椰奶和香蕉糯米糕,各具泰國甜品特色味道清新
