呢排有口福,成日都有朋友請食飯,呢晚仲要係新餐廳!K11Musea 7樓這一間NIRAS, 我估應該唔係開咗好耐(不過我好少上7樓所以唔肯定),係食泰國Fine Dining。Fine Dining確實食過唔少,行泰式嘅真係未試過,有期待架。這裡環境落足本,空間感足夠地方也舒適,要情調有情調,服務非常到位,殷勤真誠而且對細節很在意,感覺非常良好。食物質素定位也高,食材不吝嗇,十足Fine Dining氣派及Presentation。今晚這個 6道菜的晚餐絕對係好精致嘅配置。唯一美中不足的是,整體份量實在不多夠,若果是餓著肚子想來大「刷」一餐應該未必夠喉。餐廳不妨考慮加多一點較飽肚的食物,那就可以徹底滿足了。不過講開K11 Musea,不能不慨歎一句:已經好幾年了,我實在無辦法適應慢過行樓梯的電梯。我不是誇張,一諗起要在這商場搵電梯、等電梯、成個過程好似校咗5X慢動作的感受,真係好影響我考慮在這商場去幫襯要搭𨋢先上到去的餐廳。不過呢,可能只是我無耐性罷了,晚飯時間要等十分八分至十幾分鐘的電梯,可能這是閒事,不值一提吧。

開胃小食有四款
當中我最鍾意 #煙燻油甘魚刺身
是用上了泰國魚露、香蔥及炸蓮藕片等
再攪拌油甘魚刺身而成
口感很綿綿充滿着泰式風味
還有灑上咖喱粉及胡椒啫喱調味的炸泡芙波
旁邊的 #帶子柚子泰式沙律撻
上面有營養價值極高的魚子醬
還有 #粟米蛋黃撻
鮮甜的粟米加上薄脆的撻皮
一啖放進口中已經有多層次嘅享受

廚師烹調蝦的構思
是源自於泰國的泰式生蝦
先將 #虎蝦 煮熟取代泰式生蝦
上面有一些海葡萄、泰式香草及醬汁
而個辣味是以紅菜頭做Base
加入辣椒洋蔥等製成紅菜頭雪葩
撈埋一齊食好像食緊泰式生蝦咁

廚師先將魚油淋落去 #馬友魚 的魚皮上
令食落去口感更香更酥脆
而魚肉肉質很新鮮滑溜
旁邊的肉丸是用免治豬肉及泰式醃蝦
配搭四種不同類型的羽衣甘藍醬汁及配菜製成
旁邊的是比較稀身啲嘅 #泰國紅咖喱汁
點少少有少少辣但係好香濃

採用新鮮雞蛋炸成的酥脆煎蛋碎
而冬陰功汁是採用 #大頭蝦蝦膏
青檸、辣椒及香茅煮成的
龍蝦肉肉厚飽滿、口感細膩
吃起來很爽口彈牙
而旁邊有米飯是用雞湯、魷魚、乾醃蝦製成
