The first dish already gives you overwhelming truffle flavour
With the pouched egg fusing with the truffle foam
It takes no harm to dip your sourdough into the paste and eat it all at once


M9 wagyu is perfectly cut with 10-20% fat
Remember to cut it in a way that you can have both thin and fat meat all at once so to balance out the flavour
The truffle sauce aside definitely elevated the dish and add another complexity to it
