The amuse bouche was Lobster Tartar with cucumber, the refreshing cucumber complemented very well with the lobster, and it turns out to be a pleasant appetiser!

The 1st surprise dish - Tuna Tartar with a seared Saury, along side with a fig jam toast. The tuna tartar was splendid and definitely didn’t disappoint, the seared saury also gave a unique texture to the dish. To be enjoyed together with the fig jam toast, it was indeed a delightful surprise dish.

The seared scallop was perfectly seared with an opaque centre, it was extremely soft and tender, and it worked really well with the cream sauce. The sweet and tart mango salsa also adding the complexity to the dish. You can even soak up all the cream sauce with the croissant.

The Botan Shrimp was lightly seared on the outside, the contrast between the seared exterior and soft interior was amazing. The tempura shrimp head was pleasantly surprised by how crispy and rich in flavour.
The orzo underneath was cooked to al dente with a firmness to the tooth.

The 2nd Surprise Dish - Tuna’s Cheek, the flambé is dramatic, as it is engulfed in blue flames! The cheek of tuna was so tender and meaty with a hint of smokiness.

The Kagoshima Wagyu Beef Served with melon, pickles and berries, all these components helped to balance out the succulent meat and each bite has a rich flavour! The Kagoshima Beef was cooked to a beautiful medium rare, and the juiciness was retained in the meat.

To round off our meal with a sweet note, a delicate dessert with crispy pastry, Panna Cotta, Red Velvet cake and Chestnut, dipped them in the caramelised cream to enhance the caramel flavour.
