Within one month, big change for serving staff!

As 20 years this restaurant lover, I was so disappointed tonight. Food is OK. Almost all waiters and also reception staff replaced within one month and mud service provided. No knowledge how to change plate and serve another cup of tea, worse than cheap restaurant. What happened for this traditional one of best Cantonese restaurant in HK?
