想找食蝦子麵,在買肉乾時問店員祥記位置及質素,店員說祥記都好食,但經常多遊客及價錢貴,街坊多到同等質素較廉價的聯記。等聯記開門時,店員讓我們入內先坐。蝦子撈麵都算ok,但蝦子不夠香,帶點苦。雲吞不過不失,較欣賞水餃。薑葱撈麵好得,好香,勝過蝦子撈。白灼魚皮好得,爽脆,調料好香,友人平時任何魚味都吵說嫌腥,她竟然加入搶食。辣椒油好香。汽水不夠凍。食物份量不大,適合當小食茶點。店員親民,像街坊鄰里般。

我們總有喜歡的明星。

特別食肆,講真好味又點會完全相同呢,明星鐘意好,代言好,介紹好,完全冇根據,冇保證,冇包單,只有自己的舌頭才能相信。

當然,好多時候也有例外也會一致,城城最愛的太和殿我是覺得不錯的,至少吃完後我也有一刻覺得自己是舞林皇者,哈哈,說笑罷,只是味道,感受,整潔在台灣的麻辣點來說,還不錯,這是明星喜歡好的餐廳一個好例子。

不過,有時候,有些選擇並不是你覺得好就好。

在澳門準備離開的這個下午,就有一個幾好的例子。

話說蝦子麵在澳門有名到不行,說真,什麼祥記六記早已吃過多少次,每次都想找一些小店,新鮮的店,少人談的店,那才會吃得更刺激和有趣。

今天就因為謝霆鋒來到這裡,這是在福隆新街附近的聯記麵家。

外面已經見到他的相片,大家都知道佢煮野食叻,通常煮野叻的人的口味都是值得相信的,因為我對佢信心都大。還有原來看blog說開曾經有過檸檬主持的飲食節目介紹佢,相信應該不會差到去邊。

吃過六記和祥記的舌尖當然是有要求,特別是檸檬介紹,我的期望當然也不少,特別是有名的兩位殿堂食家都說過這裡的蝦子麵不錯,我當然跟風叫一下。

蝦子麵平過其他幾間有名的店,以為有平有靚,唔大碟我估到,來到的樣子也還是吸引的。

不過吃下去就有點奇怪,首先麵餅好像有點漿著,那種感覺好奇怪,麵條雖然一點也不濕,也很乾爽,但那麵餅真的是麵餅,是一塊餅,滿有蝦子香的麵餅,那感覺是很波動的。

本想吃雲呑,E殿堂食家話唔得就當然唔食,眼見全間鋪都冇人叫,我也不叫了。

於是我叫了那個魚皮,又係澳門必食的東西。

不過又係幾令人失望的一件事。

首先魚皮雖然爽口,但那個溫度以微暖為主,我覺得吃得滿不是味兒,豉油令其味覺出眾一點,但整碟魚皮靈魂都像不在這裡,祥記在蝦子麵和魚皮,都毫無疑問,完全是兩個層次的不同和高低,是小學和中學的分別。

我估可能是檸檬覺得以小學程度算好吧,所以先介紹,因此明星有時候真是不能完全相信的,如果你因為想喜歡佢喜歡的食物,我想你會失望的。

食家T小姐知我來澳門,和A小姐到來,兩個靚女一齊食飯,當然不能慢,叫佢地食下魚皮,大家感受下明星喜歡的味道。

當然有人撐就食多樣野,於是俾多個機會佢,叫個炸鯪魚球,蝦子麵金三角的六記和祥記都有精彩的炸鯪魚球,看看呢度又點。

這個炸鯪魚球令我心情跌到谷底。

炸鯪魚球咬下去唔算熱,平常的如祥記煎得金黃色又脆皮,這裡的皮好似皺紋般,又乾又齋,感覺已經不好,然後咬一啖,感覺就像氣球穿氣般,立刻扁左,我完全唔知發生乜事。

我在想,唔知謝霆鋒有冇食過,我想如果有,佢應該會像我般可以唱首非走不可。

你的天空宇宙只夠我流淚不可跳舞。有些地方如祥記是好吃得跳舞,但這裡流淚也不夠,大約真是非走不可。

第一次食聯記既蝦子麵時已覺得佢抵食又好味,到第二次去時水準依然keep 倒。第三次食時依然冇加價,都係咁抵食,不過覺得佢加左豉油,老闆話一向有加,但我同老公都記得之前冇加,因為加左會蓋過蝦子既鮮味,麵亦冇咁彈。於是乎今次第四次去食時,同店員說明走豉油,雖然店員話走左豉油會淡味唔好味,但我地仍然堅持要走豉油,結果呢?如我地所諗,係原來既味道,走左豉油後蝦子鮮味番哂嚟,如果可加丁點豬油吊味就更正了!今次去都仲係之前個價呢!唔明點解呢間咁好味既蝦子麵,竟然冇乜遊客識貨,都係本地人食多,我可是想聯記長做長有架,但多人又怕要等位,好矛盾呀!不過,都推介大家嚟呢度食蝦子麵的,因為都想呢間舖可以一直做落去嘛!(加唔加豉油大家自己諗,始終口味既野人人唔同嘛!)

澳門兩天美食遊,終於到左晚餐時間,因為太座大人以前試過祥記,於是我地試下呢間聯記。晚飯時間冇乜人,情況同祥記既人山人海相差好遠。太座大人食雲吞麵($16),侍應哥哥推介我食雲吞蝦籽撈麵($24),於是試下。雲吞細細粒好味道,蝦籽咸咸香香,麵亦比較一般既有彈性,唔係普通麵店既麵,咁既水準加上咁既價錢絕對係低食。

Whenever I come to Macau, I try to have a plate of shrimp roe noodle at Cheung Kee, the famous noodle place. Today, however, when we got there, the shop was closed for 4 days. My friends went first for a pot of Shark's fins each, then they decided to have almond paste egg white soup before going to the ferry pier. Whenever I come to Macau, I try to have a plate of shrimp roe noodle at Cheung Kee, the famous noodle place. Today, however, when we got there, the shop was closed for 4 days. My friends went first for a pot of Shark's fins each, then they decided to have almond paste egg white soup before going to the ferry pier. I have to add this was only 2 hours after our very delicious and big meal at Robuchon a Galera. Since I am also not a fan of sweet Chinese dessert, my interest was drawn to the noodle shop opposite the dessert house. I think I remember the name from somewhere and it was advertising its fish roe noodles. Well, nothing to loose and we split into 2 groups. 4 of us went to have dessert and 2 of us went for noodles. I ordered the fish roe noodles. The soup came first and I have to say I wasn't impressed. It was cloudy and tasted mostly like salted water. But when the noodles came, the shrimp roe smelt very rich and strong, most appertising. The noodles still had a good bite and the amount of roe, noodles and light sauce at the bottom was just the right proportions. It was most enjoyable and absolutely matched up to Cheung Kee nearby. I think most people come here as a result of not being about to go to Cheung Kee. Now I know I can come here as an alternative and the seats are even more comfortable.

My friend ordered the same noodles as well as a plate of boiled fish skin. She said it was very fresh and had a good bite. I am afraid of boiled fish skin although I like deep fried fish skin. She couldn't finish the noodles but finished the fish skin as she said it's not an easy dish to find in HK anymore especially when it is done well.

So I left Macau satisfied with our food adventure and the fun I had with my girlfiriends who all escaped work on what would have been a very uneventful Wednesday otherwise.

- The bad news 1st! The wonton's here have a very melty and thin skin, it wasn't very good and doesn't make passing grade!
No wonder it has very little customers. The fillings of prawns & pork was ok though.

The Prawn Roes here might not be the best there is out there, but at least it has some taste, unlike 劉什記 or 祥記麵家 (the latter which serves rubbish grade 蝦籽, I have no idea how it managed to bluff its way into the Michelin Guide - wait for my re-review of that shop soon, and you'll understand why I take such a hardcore stance against it!!
) The noodles here meanwhile are ok acceptable in fact, it has noodles taste but were over-boiled. Not as good as places like 六記 or 祥記麵家, but its more than edible! At least its hand-made!

魷魚蝦籽撈麵 -
The squid served here seems slightly rubbery, although I over-saw the shop owner's son cutting them up with meticulous care. The prawn-roes and noodles is goodish, but their wontons and squid are what really lets it down!

湯 -
The more I eat out at noodles shops in HK and Macau, the more I'm beginning to understand the trend - finally!!! You see, a lot of the cheaper Chiu Chow or Cantonese style shops, tend to serve a very protein-like tasting soup, much like a French Fumet.... made with discarded fish bones, fish heads and eye-balls, which lends it that special fattish but fishy soup taste! Otherwise, other cheaper shops make theirs using mostly Prawn Shells and MSG taste. Whereas, the Top End Wonton or Noodles shops, as is expected nowadays, tend to serve soups made more with Toasted Flounder or Halibut (方魚), also Pork Bones, Chicken as well as some Roasted Prawn Shells and Prawn Roes (thx to Samurai to pointing that out!
), plus other proprietary Medicinal Herbs!
The soup here is more of the fish protein type style, but it also has a slightly flounders and pork bones taste, but not much. It doesn't even have Chives in the soup to give it that extra depth though.

- I THINK THE PRAWN ROE NOODLES HERE ARE DEFINITELY EDIBLE. A HIGH '3' to LOW '4'! ITS RECOMMENDABLE IF YOU CAN'T WAIT! THE BELOW REVIEWER IS NOT WRONG TO SAY ITS ACTUALLY OK-GOOD AT ALL!


- THE OTHER STUFF THOUGH, WERE DISAPPOINTING, MORE IN THE 2-3's RANGE.


- WORTH A TRY DEFINITELY, CONSIDERING IT IS HALF THE PRICE OF 祥記麵家 BUT CARRIES A SLIGHTLY BETTER PRAWN ROE!

2008年11月09日,聯記因為阿蘇而來的,看看它可會好吃過祥記,兩個人叫了雲吞蝦子撈麵:吃來香味比不上祥記,但麵的質素都不錯。雲吞幾好食。魷魚菜:想叫豆腐的,沒有。魷魚菜要26元,都幾貴,魷魚唔係咁好食喞。
