Sweet and Sour Garoupa with Bell Pepper and Pineapple

其實是松子黃花魚的變奏,選用星班會令成本飈升,所以用上一斤半左右都合情合理。

東星班肉質細緻嫩滑,個人始終愛好清蒸,上脆漿油泡過,然後澆上甜酸汁,偶爾改變食法,亦帶來新意。

豬手是碎上,就算是女士都不怕食得狼狽,炆得入味之餘,連膠質都跑進醬汁裡,而且帶一陣辛勁,刺激了味蕾,大廚又加入了陳醋,令人不會覺得太膩,又是一道上佳的佐酒菜。

最啱懶人的菜色,柚子拆肉乾淨,放在湯匙上,剛好一口吃完,炸子雞「上皮」的過程處理得夠時間,皮下脂肪只得薄薄的一層,入口卜卜脆,雞肉又不覺老,配上柚子的清香,難怪最受在座的女士歡迎。
