Finally tried this < Zagin Soba > that has been widely appreciated by Hongkongers. Did not disappoint but did not especially surprise given the price point.
-The joint serves three options of ramen - chicken broth, seafood chicken broth and tsukemen.
Tried the first two ($138). Both had a rich, thick broth that had a foam on top as the broth is whipped with what's similar to the method of whipping coffee.
Both were flavorful but not salty, and I didn't feel like I was having too much MSG.
Both came with a slice of sous-vide pork and chicken breast which were tender as well as deep-fried burdock. The burdock was crispy and definitely enhanced the overall presentation of the ramen.
Size was not too big and just right but to some it might not be fulfilling enough.

在跑马地及中环也有分店的《座银》，来自大阪🇯🇵，主打「鸡白汤拉面」
拉面选择不多，只有少少的三项选择这次尝了两道汤拉面还有一份糖心蛋
准备这篇食评的时候，才看见网民大多推荐他们的沾面还有炸鸡，唯有等有机会再来试试吧😆

鸡白汤鸡味浓厚，味道不会带很重的味精味道，反而有种鲜甜香😋口感顺滑，质感也不会很油腻
以咖啡的打泡法打起，所以可以看得见有丰盈的泡沫

以鸡白汤为基底，加入虾干、鱼干一起烹调，的确多了一层海鲜的鲜味🥰-
两道拉面同样配上低温慢煮的鸡胸肉、豚肉叉烧，肉质可以保持鲜嫩
挂在碗边，可以就这样吃，也可以沾上汤汁一起吃
拉面面条挂汤，质感也刚刚好🍜
除此以外，还有炸牛蒡，口感酥脆，作装饰点缀，又提高了拉面的整体层次😚

棵木烟熏糖心蛋 ($15)
糖心蛋奉上时已经切好两半，可以看见流心的蛋黄，熟度控制的很不错🥚不过虽说是有烟熏成分，但烟熏味道不重～
