有一晚工作至颇夜,同事提醒我这里有间日本餐厅是我一直想去的,于是我们三人便来一试。

这店位于日街,位置较为偏僻,自成一角。店内地方不大,只有两张四方台,六张吧枱,而上一层则有一间大房及私人派对,可容纳约16人。

After a long night at work, my colleague reminded me of this restaurant that which was open till late. We decided to check this out.

Tucked away at an alley in Sun Street, the restaurant was small but elegant. It had a table for 6, a table for 4 plus about 5-6 bar chairs. We were told that a private function room for a maximum of 16 persons was also available.

这里其实并不是一般居酒屋。主要提供清酒配对的怀石料理。师傅拍板的晚餐可以不用预订,但若要有清酒配对的晚餐则要两日之前预订。据知厨师是从九州来的。

饮品方面,除了一款「越前」啤酒之外便只有清酒。清酒选择则令人觉得花多眼乱,幸好友善的店员对店方提供的清酒和食物非常暸解,惊他介绍的都非常给我们的心意。

我们当晚工作后实在太累,所以其实没有心情吃太精致和需要用心用神进食的料理。我们于是决定不点厨师发板或任何套餐,基本上跟随店员的推介。

After having a glance at the menu, I realized that this was not a normal izakaya where you order late night beer & skewers. In fact, it specialized in sake pairing. Two days advance booking is required for sake pairing dinner. But for the Omakase dinner without sake pairing ($700), there is no need to book in advance. We were told that the Japanese chef is from Kyushu.

There was nothing but sake (good quality ones) on the drinks list. We were told there was one type of premium bottled beer.
We decided to go for a la carte.
The friendly manageress was very knowledgable with sake and very familiar with what they were serving and the appropriate sake to go with the food. So we basically followed her recommendations.

听说是时令。火灼之后香味浓郁,肉质爽口弹牙,刚好配衬我们的清酒「花春」。一口太刀鱼,一口花春,果然是相得益彰。很赞。

The grilled tachiuo sashimi was one of the top recommendations. Indeed, it was excellent. Grilling the tachiuo really brought out the lovely aroma of the fish oil. It was perfect with the bottle of sake, "Hana Haru(?") 花春, again recommended by the manageress.

味道与秋刀鱼其实很相似,所以同样适合点姜茸和浓味酱油进食。

We also had sardine sashimi. Both the apperance and taste was similar to sanma sashimi. Don't forget to add ginger and dip it in the dark shoyu.

烧得相当出色的一道菜。鱼油脂香浓郁之余有山椒来醒味,不会觉得油腻,赞。

Barramundi grilled with raw sansho: This had a lot of fish oil, even more than the tachiuo. The sansho gave it a bit of a sting to neutralize any oiliness. One of my colleagues was extremely impressed by this dish.

这道菜不太记得名字。只记得是白身鱼包著菌类和紫须叶, 同样美味。

I couldn't really remember the name of the dish below. Only that it was some type of fungi wrapping a type of white bodied fish and shiso leave. Again, this very delicate and delicious.

粟米和炸明太子(前)与四件(カマス) 白身鱼卷著小松菜和白子(后)的配搭亦很新鲜和协调。
这和鱿鱼并乌鱼子概念上都是一阴一阳的配搭,不但精致,口感和味道都很丰富。

(Back) Kamasu with Shirako and komatsuba, served with soramame.
(Front) Deep fried sweet corn and mentaigo.
These two dishes, and the dish shown at the photo below, i.e. Ika with karasumi, all seemed to have embodied the concept of yin & yang. Those all had light flavoured ingredients mixed with strong flavoured ingredients. There was also great contrast between the texture of the ingredients. I like the Ika with karasumi in particular as it was great with sake.

同事亦点了一客明太子汁烧牛舌,他们觉得牛肉味很鲜,口感亦佳。

My colleagues ordered a grilled ox tongue with mentaigo sauce. They really enjoyed it.

最后点了北寄贝炒饭。北寄贝刺身寿司大家都吃得多,但用作炒饭还是第一次。饭质有点像釜饭,而北寄贝即使加了热仍然充满了弹性而又不会过韧。

Finally,a bit of carbs to fill us up. We ordered hokkigai (sakhalin surf clam) fried rice. The rice were more like steamed rice mixed with a bit of shoyu and mirin. I've never had cooked surf clam before. I thought the surf clam would probably be a bit tough after being heated. Fortuantely, it wasn't at all. The combination was pretty good.

埋单每人$1,000,连两枝清酒。虽然这里不是属于宵夜裹腹的地方,但我都有七至八分饱。食物精致美味,环境舒适优雅,店员殷勤有礼,我们都吃得很满意。绝对值得一试。

The bill came down to $1,000 per head including two bottles of good quality sake. Highly recommended if you enjoy the delicate cuisines.
