参考过上两期的饮食男女,内页介绍过的一所意大利餐厅原来是由来自意大利南部的大厨所煮理。从杂志上了解到大厨不但在邮轮及家乡的海鲜餐厅以下厨了十数年之久,还因家族三代都是以捕鱼维生,因此对他所选取及烹调海鲜食材都暂且投以信心一票。个人较喜欢追求传统口味多于现今的Fusion菜, 是晚本来打算与太太前往么地道一间私房菜的,但那处的电话久久未有人接听,在订不到位子的倩况下,便即时转軚来到这间位于尖东兼且餐厅名字独特的Only Buonasera。在下午时段已致电餐厅预约七时半,但比预约时间早了十分钟。探头四处张望餐厅四周环境,约有千多平方尺的地方却空无一人。突然有种不详预感,约了太太七时半在餐厅正门等候,太太还没到达,忽然闪过是否应另觅它处的念头,但最后还是决定选择在这里晚膳。既然仿似包场,又见其它食友们在这间餐厅拍照出来的食物相都是暗淡模糊,效果不佳的。那就找个光猛的位子坐下,方便拍出清晰的照片吧! 餐厅环境无论是海洋颜式的墙身、贝壳形状的灯罩或是悬挂在天花上的鱼网吊饰,全都充份反影了这间意大利餐厅的强项菜色及店主的出身背景。很好! 难得与太太能在免费包场的环境下去响受一顿意大利晚餐,想真一

首先向侍应取来餐牌,当我正与太太研究著吃些甚么时,侍应极速地给我们递上小食。两种小食包括蕃茄多士及酥炸矮瓜。这是否南意传统小吃我可不太清楚,但它们所采用的是鲜甜多汁的鲜茄这点是无可置疑的。鲜茄内亦尝到少许香草及胡椒味,而那个酥炸茄子体积很细少,极难在本地超市买得到。整只茄子尤其茎部位置炸得干身香脆,而茄子内相对较软稔,亦有点香口的咸味。

以下是我俩决定点选的菜色:

杂菜汤:汤料颇为丰富,当中包括西兰花、甘笋、洋葱、蘑菇、蕃茄及美国黄豆,然后再在汤面上洒上胡椒及芝士粉。汤料营养丰富,没中式萝宋汤的茄膏及浓味,感觉是家庭式的无添加色素营养汤,反而洒上胡椒及芝士粉后的杂菜汤更觉清淡中带来一点味儿,质感丰富非常。

沙拉菜:像吃著芝味无穷的海刹沙拉,生菜新鲜,虽然烤过的烧鸡味道浓烈,但可惜鸡肉烧过了火喉,鞋口如火鸡肉的质感。

蒸海鲈:侍应极力推介此一招牌菜,但自已一向认为西餐的海鲈大都烹过了火喉,但在最终还是对家族三代都是以捕鱼为生的大厨所推介的招牌菜再投以信心一票。果然不负所望,一尝便知海鲈是新鲜货式,否则餐厅绝不会胆敢用清蒸方式来奉上此度招牌推介。去了皮的鱼肉鲜滑无比,配上由清纯橄榄油及香草制作之crazy sauce感觉清新,味道绝不复杂花巧,鱼肉原味亦不会被酱汁所盖过,是完全原汁原味地活现在味觉感观的世界里。

意大利海鲜饭:海鲜饭所用的海鲜材料,照餐厅所描述均是入口自意大利,除了蚬肉例外。饭粒的软硬程度相信是为迎合本地人口味而特意烹调。海鲜饭除带有蕃茄的微酸外,配菜还有基本的海鲜如虾仁、青口、蚬、八爪鱼外,另外还加入橄榄粒、黄绿青椒,再用牛肝菌汁煮成。虽然是入口意大利海鲜,但可惜鲜味却欠奉,除了青口是例外的,比较起来饭粒较海鲜烹调得出息,那是因为每棵饭粒充满著野菌的香气。

吃至最后,当然是要尝尝由意大利厨师所炮制的意式甜品,我们最后选择了一个homemade甜品二人set,比较各款甜品来得较为经济实惠。

Tiramisu:香滑软绵的口感外,那四层的T iramisu是传统制法,是依足次序层次来制成的,是清晰鲜明,不像有些港式Tiramisu层次求其乱来。奶油味道香甜,酒香味浓郁,唯独芝士味不太明显。

朱古力慕丝:浓滑细致如丝的口感,浓郁甜腻而没带半点儿苦味,教人难以抗拒的朱古力令齿夹留香,历久不散。

奶冻配士多啤利汁:奶味非常浓郁,兼且滑溜溜,比3.6北海道的纸盒装纸品奶还要来得浓郁。是全脂奶的味道。它没有朱古力慕丝的甜腻,单靠多啤利鲜果酱汁,便能令浓郁的奶冻增添一种酸酸甜甜的果香,却一点也没抢去奶的原始味道。而旁边放有一种在香港很难找到不知道名称的意大利果,但可惜我并不欣赏,此意大利果超多核且只是"得个甜字",并没有令人一试留下任何味道的记忆,意想不到的是侍应对我们说到此意大利果的果核可吞下肚,干么? 果核不算细粒啊!

是次所挑选的菜色除了饭粒是因应本地人口味外,其它菜色口味地道正宗,选材亦不妈乎,只是各海鲜的新鲜程度各有参差,但总算能吃到南部意大利厨师烹调出来的意式风味,也算是不枉此行吧!
