Ninja Ramen has always had a good Tokyo style type of broth - it is lighter than Kyushu tonkotsu. I was surprised walking past here one day, as this is the 3rd time they have updates their menu. This 3 reincarnation ramen finally makes do with a Round Char Siu. The base broth still remains a base mixture of a more subtle 淡丽 ramen broth made from Chicken & Vegetables, especially in this salted Shio version which rids of the pork bones altogether.
Soup - it was light but precisely what it intends to do, with a chicken and veggies taste which is complex yet not heavy. I think many hardcore ramen eaters will find this too simple... But this is actually a current trend in ramen eating in Japan as you can eat more of them on daily basis. 3.5/5
Noodles - Thick and golden, these were bitey and had a good noodles taste. One of the best ones in town I have eaten, Ramen Taifu is another place where the noodles impressed. 4.5/5
Pork - The Char Siu here had always been the best amongst the Ramen Champion contestants ever since I did a test of all of them for Weekend Weekly magazine. This new round pork is blow torched re-heated and is not too fatty but has a good pork taste. It's not as tender as the previous 'long version' pork belly they used to serve here though. 4.5/5

OVERALL, very happy with the 3rd generation of Ninja's Ramen. Will be back soon to try other flavours...
