Most of Black Sheep's Restaurants that I've visited were above par when compared to industry standard, and Carbone is no exception. As soon as I sat down, the waiter served a small chunk of parmesan cheese from the wheel close to the entrance. It was heavenly and I savored every bite. Having heard many great things about the spicy rigatoni vodka, I had high expectation for it going into it - and I wasn't disappointed. The rigatoni was the definition of comfort food. It was chewy, a little bit spicy to tingle your tongue and absolutely creamy. It was the feeling of being 10 and your mother tucking you in to sleep at night after a long day out with your friends in the sun.
The rest of the food wasn't as great however. The chicken parmesan was alright. The chicken was fresh, but was a little dry. I would also prefer if it had more breading and be fried to a golden crispier crumby coating. Additionally, in contrast to most reviews I've read, I wasn't blown away by the meatballs. Other than its generous size, there's not much else that I can say about the meatball. I much prefer Pirata's meatballs. The chocolate icecream wasn't a stand out as well, but was a sweet way to round off the meal.
The service was great and attentive, but not exceptional. There was a mosquito flying about, but other than that, hygiene and social distancing measures were taken seriously (as I dined during the covid-19 period). The New York-Italian decor - mahogany wood panelling, checkered floor tiles, was a feast for the eyes and I very much enjoyed the old school atmosphere you see in mafia/organized crime movies like The Godfather. Despite Hong Kong's widely diversified gastronomic delights, there aren't many other restaurants that are quite like Carbone. And as such, Carbone stands out from the rest rather memorably.
Carbone is definitely worth a visit, if not only for the rigatoni. On my next visit to Carbone, I would definitely have the rigatoni again, skip the meatballs and the chicken parmesan, and try the ribeye diana instead.
