My fourth time at Epoch since my last writeupImprovement: Now, the bean is ground per order and I saw no leftover bean in the hopper... While I still don't like its ristretto (pouring down like a waterfall = acrid), it tasted much better than what I had in the past due to freshly ground bean. There's some note of acidity at the beginning but some bitterness toward the end.. Could be high temperature or anything.
The strong benefit from freshly ground bean was surprisingly shown up in the milk drink. Its Cappuccino was spot on on the temperature as usual I consider it's Tracy's signature on milk based drink. Foam's still weak but acceptable with very faint sweetness in the milk. The Capp now had a better balance of milk and coffee that you can sense more of the flavor than the old style ground left in the hopper forever drink. Kudo to this effort.
I maintain my suggestion for Epoch on milk based drink. Really hard to match in Hong Kong. Espresso itself was restricted by Epoch's founder bean choice, stale and imported bean... I wish the owners open up their mind and changes their bean offerings to freshly and locally roasted blends
