The French pressed duck. My all time favourite is now savourable in HK, and it's done the right way with the silver tower just like how it is in La Tour d'Argent in Paris. Whist Caneton Tour d'Argent should definitely be on your must try food before you die list, the pressed duck at Alchemy could serve the try purpose. It's a pleasant experience with deliciously prepared canard au sang they called it.

After you ordered, they'd show you the chilled duck flown all the way from France before they prepare the dish. After the duck is roasted, the breasts and legs are removed and then the carcass is placed in a duck press in front of us (given we were seated right beside the tower) to extract the juices and blood, which are then used to make the sauce that comes with the duck. Not a pretty sight honestly, if I was told they'd seat me next to where the act is performed, I'd request for another table although there aren't that many tables to start with on the upper floor where you eat in the light. In the basement, you eat in the dark (seriously!).

We ordered asparagus, canard au sang (½ duck), chocolate molten cake with ice cream and were recommended a bottle a wine to go with the meal.

Service was great with the server checking on us every now and then to ensure we were enjoying our food.

The duck breast was used to make the canard au sang and was impressive, we were being told the dish must be eaten piping hot and avoid the bloody taste and smell once it has gone cooled. The duck leg was roasted to perfection with crispy skin and juicy meat. The rest of the meal was more than ok too.

Each customer will be given a personalised postcard certificate to confirm your experience of the canard au sang.
