Beef brisket noodles are one of my go to comfort foods, but a good bowl is hard to find in HK. Until now - on recommendation of a foodie friend I visited the newly opened In Beef潮牛腩in Wanchai. The seating was unpretentious yet comfortable, bright and clean. The service was friendly and professional.
Yet what really stood out was the food - each dish we ordered was impeccable. It’s obvious the chef has put much effort into choosing the ingredients - you can taste the freshness. The broth was just the right balance of tastes - not too sweet, not too salty. Not surprisingly, when I asked the manager later, he told me they don’t use any MSG. And true to his word, I didn’t feel thirsty after.

The highlight of course was the Prime beef brisket cooked to perfect tenderness, retaining the meaty flavour without overwhelming.

So happy I finally found a replacement for On Lee, I’ll be coming back to In Beef often! The only thing missing is I wish they could add my other favourite On Lee dish - butter toast - to the menu!
