Finely curated and prepared by former Michelin-star Chef Chris Chan, the delicate eight-course menu features an array of appetizers, a choice between two main courses, and two desserts; not to mention a carefully selected wine pairing is also available for an additional HK$788 per person.

Our most-favored appetizers come down to the Truffle dish of freshly shaved black truffles over porcini mushrooms, with potato foam and 63-degree onsen egg; and the roasted Norwegian Langoustine Lobster served with fried Thai spices for a savory finish.

Though we were incredibly impressed by the intense marbling of the Hida Wagyu, served with thinly sliced celeriac and grounded Argentinian green sauce for extra depth of flavor along with the fattiness of the wagyu; and the perfectly grilled large Spanish Carabinero prawns, complemented with squid ink risotto and pan-fried maitake mushrooms with creamy aioli, presenting complex burst of flavors and textures.
