Blue Fin Tuna (Hon Maguro) O-Toro from the belly has a bit of sinew (有少少筋) stop complaining people... Only the neck part has no 筋.And smaller Blue Fin Tuna less than 100Kg has less fat.And cheaper Big Eye or Yellow Fin Tuna\'s O-Toro (which looks whiter in colour) from Indian ocean actually has less 筋but also less flavour.Don\'t complain if you don\'t know Tuna... But most tourists go to cheaper/middle class sushi shops in Japan and only get served cheaper fish\'s toro and you think it is better, only because it has no 筋.
It doesn\'t actually work like that.
In actual fact, BinCho-Otoro from the cheapest tuna is one of the best toros around, but it is quite rare even in Japan. Bincho-toro however is popular but very bad, no flavour.
The theory is not fixed unfortunately....
Anyway I like this place. \'Gin Sing\' and here are equally good to me.
