Dinner. Thoughtful host had booked out the entire counter- 10 of us; with partitions. Private room available seating 6.Restaurant is headed by chef Thomas, who has worked at Petrus for a long time, and brought us Sushi Yoshi from Osaka. He now specializes in Japanese- French fusion cuisine.Only one menu- $2,180 pp for 21 courses (of which 8 were sushi served intermittently). Puff with fried Japanese oyster and oyster mousse (served on a Hermes plate❤️). Plus an oyster leaf (a leaf that grows on rocks and tastes like oysters) from Holland.

鲷鱼白子terrine with caviar. The yellow ones had been marinated with truffled oil.

花胶topped with fried 樱花虾 in 松叶蟹 sauce with parsley. 花胶 unfortunately was too tough.

Abalone and uni with 虾子面made with liver sauce.

Lobster cooked in cream and butter. Normally not a fan of lobster but the sauce was excellent and there was no usual fishy taste.

牛肩肉 braised in red wine with 大根 soaking up all the essence.

龙趸旗 with 酸菜; powder with 青椒油 on the side. Mine was too spicy even without the powder.

Tai roll. Chef also gave us slices off a dried caviar stick, to go with our alcohol.

To finish off: tamago and fish bisque (very fresh and sweet).
Dessert: caramel meringue with oolong tea IceCream. So yummy I finished my friend’s one as well.
In summary: talented and friendly chef; delicately creative; inspiring fusion creations. Recommended.
