The urchin was super fresh and high quality. Some restaurant may sell urchin not fresh enough,the taste could be strange.

寿司は厚切りで新鮮、例えばマグロ、ホタテ、はまち、サーモンは完璧な切り方、トロのミンチは超新鮮、私の好きなネギ付き、エビの煮付けは巨大でした。ウニもとても新鮮で上質でした。お店によっては、鮮度の悪いウニを売っていて、味が変なこともあるそうです。
