There are more and more restaurants by the name of "XX by Chef Y". But if you think you are really getting food comparable to that done by the chef (or at least acceptable to the standard of that chef), you can be totally wrong. The Fat Pig is one of them.The first plate we had is Chopped pig's trotter on sourdough ($45). It has a really strong favour similar to 猪脚姜 which is not bad of itself. The problem is you cannot taste any "pig" at all. Wonderful for a restaurant specialized in doing pork.

Pork belly, apple glaze & burnt aubergine ($98) is the next. I must say the pork belly is great given it's cripsy skin and fatty, tender meat. What went wrong is the purple mashes on the side. It tasted weird and did not work with the pork belly. Had no idea what that is.
The main we ordered is Pork ribs with rice and coleslaw ($348). The best part of it however was the coleslaw as it was rich in cumin. The main character pork ribs were overloaded with seasoning. It is way too salty even if you had it in rice. The coleslaw can help to balance the flavour though. (It would be much better if the coleslaw is double of its original size.)
Lastly we ordered the Deep fried pork ears ($58). The pork ears are clearly lack of favour if you eat them alone but the caper dipping sauce did save the dish. (Regretably, some of the pork ears are not fresh...)
I will not return for the pork belly, given the price and given the overall quality. I thought TFP can make a difference out of the restaurants opened in shopping mall but it seems my hope has fallen through.
题外话/补充资料：
We, as a company of 2, were given a table of 4. The sofa on which we sat was quite cozy.
