Mr. Lau, being a well-known HK food critics and journalist. He of course have tried many different cuisines and restaurants all over the world. A good food critics in most cases can only talk the talk, but not walk the walk. But Mr. Lau because of his passion for food, he would look for the best way to cook a dish even if it is the simplest dish, it is this endless pursuit of improvement that makes Kin's Kitchen an ever evolving restaurant. Every time I visit the restaurant, you can taste the difference in the dishes but in a good way.
That is why you can always see revisiting customers in the restaurant because how many restaurants in Hong Kong could always uphold its food quality and can claim that the only use the freshest and best ingredients for all its dishes.
