You don't get fresh thin shanghai noodles much thinner than the type they serve here. Served in soup, they are, surprisingly, still pleasantly chewy when you eat them fresh out of the kitchen. However, during the course of eating, they do tend to get a bit clumpy and soggy, which I guess could be avoided if you gobbled it all up quickly.I got the fatty beef dan dan noodles ($48) which really hit the spot on a cool winter's day. I got the fatty beef dan dan noodles ($48) which really hit the spot on a cool winter's day. Spiciness is a bit lacking, even if you order "big spicy", and I found that I needed to add chilli oil and soy sauce to enhance the flavour. The soup is flavoured with salted vegetable and dried shrimp, so expect little kicks of flavour as you eat your bowl.
Fatty beef was simply added on top after blanching, and it was a bit disappointing that it was not infused with any particular flavour. A shame, I think next time I'd rather get the fried pork chop as my choice of protein, at least that requires some kitchen skill!
Nevertheless, it was still good for the price, and I ate the whole tasty bowl as the serving size was perfect.
