Back in August, we had decided to do a Ramen run, actually I suspect this is the first verbal date we had agreed to. For some reason or another, Ichiran slipped down the list of date spots. It just so happened that today was another Typhoon day and word had gotten out that Ichiran was open. We paid a taxi driver an extra 50 HKD and we were soon at Jaffe Road. I went to Ichiran on a Sunday around 12:30 expecting that the lines wouldn't be crazy on a weekend. Boy was I wrong, it was like a half an hour wait.

They kind of have people managing the line, but sometimes those people wander off and confusion reigns. Several people ahead of us when we got to the front of the line walked into the restaurant because there was literally no one there and no sign or other indication that one was just supposed to stand 6 feet away from the door until.... what? Someone comes out to get you? How are you supposed to know that?

Anyway, after you get through the line there's an indoor line you have to wait in. At least it's air conditioned. They give you an order form and you select your ramen. I got:

Flavor strength: medium

Richness: medium

Garlic: 1 clove

Green onion: (white) green onion

Sliced pork: with

Spice level: 2

Noodle texture: firm

Extras: kikurage mushrooms, seaweed ($12 ea.)

Drink: ramune
One thing I couldn't quite figure out was the "Green onion" category. You got three choices: "without", "(white) green onion," and "green onion." Now, I understand "without," that one is self-explanatory. But what if you want the white and green parts of the green onion? Does "green onion" mean "(green) green onion" or "(white and green) green onion"? Or can you circle both "(white) green onion" and "green onion"? Maybe the Chinese characters make this clearer.

Here's the ramune. Apparently 'ramune' is 'lemonade' rendered in Japanese phonology. This particular beverage was more akin to Irn Bru, the Scottish soda that tastes like bubblegum. Recommended for highlanders and children.

The first thing I noticed about the ramen was that they didn't put the seaweed I ordered on it. Same for my wife. They tried to charge us for it at the end (and I mean, $12 for ocean weed, not cheap), but I made them take it off the bill. Not an auspicious start.
The broth was opaque and noticeably more oily than my wife's broth, since she only got light richness, so that choice does make a difference. I think the light actually might be the better option.

The noodles were firm-ish, but I might go with extra firm if I came again. I know you're supposed to slurp them down really quick, but I'm just not a champion noodle-slurper yet, so I need more time.

Spice level 2 is noticeable but not taxing. If you wanted spicy, I'd recommend going higher, though this is good for casual zing, and ramen isn't really associated with really spicy broth.

Garlic-wise, one clove, which is the highest you can go without them putting it on the side, seemed to impart a good bit of garlicky flavor without being too much. I think this was the right choice (for me, at least).

There were two thin slice of pork. They were quite tender, while still having some meaty toothsomeness, and not a ridiculous amount of fat on them.

Ultimately, it was a real good bowl of soup. I wish I'd gotten my seaweed, because it was lacking in vegetables, and I'm not quite sure it's worth a half hour wait, but I could see coming here during off-hours, if ever I had cause to eat then. Some reviewers say it's not as good as the stuff in Japan. I wouldn't know, I've only been to Japan once, and I didn't even eat tonkotsu ramen while I was there. But if you're not comparing it with anything, it's hard to knock what is, in fact, a pretty good bowl of soup.

The ordering system was very unique, efficient and easy to figure out (thanks to the signs). I liked it a lot.

Now the food. The ramen there is easily one of the best ramens I've had in my entire life. I'm no ramen expert (having never tried the ramen in Japan) but the ramen in Ichiran was amazing. For customization, I ordered rich soup, firm noodles, extra onions, and abit of pork. The ramen turned out absolutely perfect for my taste. I also ordered a half boiled egg and mushrooms as additional ingredients. The egg came in a smaller bowl and was cold all the way through. I put it in my soup to warm it up but it only became lukewarm. This was probably the only downside to my meal as the cold egg made me feel like it was just recently taken out of the fridge and presented to me. The mushrooms came in the soup and were a nice addition, though I don't think it did much for flavor, just added to texture. There was also free water, which apparently is special and they take pride in their water (just tasted like water to me).

Overall I had a great experience thanks to the great service and the (mostly) great food. I will definitely return.

喺銅鑼灣食宵夜，如果條龍唔太長，一蘭係我不二之選。通常2, 3點之後，等唔駛15分鐘。一人一格自閉食，不過隔離坐左成大班人，坐晒出嚟大聲傾，好擾民坐正係廚房側，仲傳嚟陣陣廣東話粗口，咩氣氛都冇。麵條好爽，叉燒普通，可能我鍾意厚身D。豆腐甜品必食，消膩!!

As a ramen lover, I have heard all about the opening of Ichiran in HK but as someone who is averse to lining up, I kept postponing my visit until now - in hopes that the lines have died down a bit. There was still quite a line on the outside of the shop when I arrived around noon with about a dozen or so people in front of me. It wasn't until I got to into the restaurant that I realize the lines continued on the inside so don't be fooled by just the line outside the shop. I actually got to skip

As a ramen lover, I have heard all about the opening of Ichiran in HK but as someone who is averse to lining up, I kept postponing my visit until now - in hopes that the lines have died down a bit. There was still quite a line on the outside of the shop when I arrived around noon with about a dozen or so people in front of me. It wasn't until I got to into the restaurant that I realize the lines continued on the inside so don't be fooled by just the line outside the shop. I actually got to skip to the front of line as I was dining alone so my wait was only about 15 minutes or so - not too shabby.

I was then led to my own little cubicle with instructions from the waiter to ring the service bell after completing my order form. The waiter spoke in bits of Japanese, and then proceeded to bow before leaving me to ponder my order. Service here on a whole was excellent and I felt like I was in Japan again.

The form was easy enough to fill out and there were instructions for first timers as well.

The choices for customizing your ramen were more here compared to other ramen shops - as you can tailor for flavor strength, richness, garlic, green onion, sliced pork, Ichiran's original red sauce and noodle's texture. As recommended by the restaurant, I picked medium or regular for most of my preference as it was my first time here. I also added an order of half-boiled salted egg as well for $12. After I rang the service bell at my cube, a waiter came by shortly to pick up my order sheet.

My ramen did not take long to arrive and the presentation looked gorgeous. The colors of the black and gold bowl contrasted nicely with the color of the broth and the arrangements of the green onions and the red sauce.

After my ramen arrived, they closed my shades for me so I can eat in complete privacy. How cute!

I made sure to taste the original soup before mixing the spicy sauce. The broth was rich and flavorful, yet the texture was not too thick so that it was hard to drink. It helped that the broth was quite hot in temperature which prevented the oil from thickening. After mixing the spicy sauce, the broth tasted even better as another dimension was added to the flavors. It was a broth I could not stop drinking. Slurp slurp!

The basic ramen only came with sliced pork and green onions. I had to fish around and came up with 2 small pieces of sliced pork. The pork was soft and buttery in texture as the ratio of fat to lean meat was just right. The taste is natural and sweet. Just wished there were more!

My half-oiled egg had arrived separately in a bowl and it arrived as a whole egg. After I cut into it with my chopsticks, I found that the egg was cooked perfectly so the yolk inside was still a bit raw. As I bite into it, I was shocked to find that the egg is cold cold unlike other shops where it's rather lukewarm/neutral in temperature. Actually I found it refreshing to have a cold egg contrast with my hot ramen.

Half-boiled Salted Egg

The thickness and the texture of the noodles were just right for my liking. The portions of noodles were rather small though - even for me. I had quickly gone through my noodles before I realized they were all gone. Maybe that's why there are all these noodle refill signs in the cubicle encouraging you to order a kae-dama (noodle refill).

My quest to try Ichiran was finally accomplished and my tummy was satisfied! The ramen at Ichiran's was definitely exceptional and one of the better ones in HK. After I reported my findings to J, he asked me if I thought Ichiran is the best in HK. At that I had to ponder a bit - it's definitely on par with Butao which is my favorite and the seating is more comfortable at Ichiran's (though you're really just sitting by yourself haha). The choice of ramen at Butao and many other places are more varied though with spinach and octopus broth while Ichiran only has one type of broth to offer. The incentive to go back to Ichiran is therefore lower while I would go back to try other flavors at Butao.

小弟第一次寫評，加上寫作文字程度有限望各位多多包涵。 14:15 開始排隊，人龍有二個街口左右。有員工派籌。等了大慨一小時就可入內。環境似library or 寫字樓每人一個cubicle。入返正題: 頭一次去食所以選了全普通，白葱加蛋，可能期望很大加上選了普通所以結果是普通。麵口感係幾好，飲頭啖湯味ok, 但撈了秘制酱汁就會好味好多。本人覺得叉燒和半熟蛋係敗筆之作，叉燒係軟滑但我自己種意有味同有d口感既叉燒。蛋又係無味既。整體黎講係唔錯。順帶一提，個豆腐甜品麻麻，山水豆花會好食d
