There's a few new shops I wanted to try at APM, and this 蒸籠料理 (せいろ料理) shop is one of them. Opened by the same group which operates 稲庭饂飩 & 魚一丁 in HK, I already had in my mind an expectation of the food quality. Unfortunately, it did not transcend it in anyway. 咖哩牛肉扁烏冬 (カレースープベース, 牛肉のきしめん: 前菜、 おにぎり付き):
Kishimen is a delicious flattened udon originating in Aichi Prefecture and Nagoya city. The version served in this shop is a little bit too thin however, making it more like Hor Fun. They were also overcooked and too soft. The curry soup base (also available in Noren) is way off the mark as well, its not even thick nor does it carry much curry spices in aroma and taste. The beef whilst tender, was attached full of gristles and fat, worst than HK Yoshinoya. A disappointing noodles dish in every aspect.


日本甘薯豚蒸籠 (日本産豚肉:味噌汁、前菜、ご飯付き):
蒸籠料理 is occasionally offered in Hong Kong, but its not really popular. I remember some En Group or Mr Steak restaurants offering it... my first exposure to this was in 九州, as it is a popular method to steam either Pork or Wagyu over vegetables, so that the fatty juice drips back and gets absorbed by the veggies and you enjoy eating them together. The Japanese Imported Pork used here is in fact quite tasty and sweet, nevermind that its slightly over-steamed and bordering dry, but not annoyingly so. Topped with a basting of miso based sauce, this really is quite enjoyable but the problem of it being too over-cooked at high temperature ruins the experience a bit. At least it was much better than the above bowl of curry kishimen.

SUMMARY:
I did not think this shop was very impressive, as from the starter of a marinated shellfish, to the ultra dry onigiri ball, a mediocre miso soup, a slightly mushy rice, not to mention the above disappointing Curry noodles dish. If there was to be 1 dish which could salvage the night, it would have been the Steamed Sweet Potatoes Pork from Japan, but that was barely ok-good rather than excellent.
Not a Restaurant I would return to in a hurry, considering the price is not exactly a bargain, and the cooking recipe or results aren't entirely very Japanese either but too localised.
I Hesitated before I Went In... now I know Why!

今次我們叫了一份日本產甘薯豚蒸籠及一份鮑魚地頭雞蒸籠 ! 首先兩個set內都有一碟小前菜, 一碗白飯, 一碗麵豉湯, 一碗酸的汁 (配 主菜用) !
白飯用真珠米, 而麵豉湯就是比較淡味那種, 飲後不會因味重而覺得口渴,另外這兩份 set 的配汁是一樣的( 原以為豚肉及雞肉會配同的汁
),

講下日本產甘薯豚蒸籠及鮑魚地頭雞蒸籠先, 豚肉及雞肉味道較淡, 無醃過, 配那酸醬汁能輕輕地帶出肉味 , 蒸 豚肉及雞肉的時間剛好, 咬入口有小小肉汁彈出, 另肉質不會太粗, 豚肉及雞肉的份量可以接受, 至於那兩粒鮑魚就比較細, 而且食不出什麼味道 !
整體來說, 感覺這兩set 食物味道是比較清淡, 小味精 , 小油, 清清地又幾好喎 , 但不適合喜歡重味的食家們 ! 不過要再試埋其它款式的食物才能確定是否全店食物都偏向清淡.......


服務方面, 侍應們無主動倒水給客人, 同時對餐牌上的食物未能完全了解,固此未能回應客人對食物的專業提問, 另外放下食物時並無告訴客人是什麽食物!
侍應們對客人的態度總算好好,可能新開張未上軌道, 相信有改善的空間 !
