今日同好友慶生,大家鍾意傾謁所以次次都要圓枱。自然選擇中菜,見由上海總廚煮理就Book咗知味舍好鍾意佢地個脆膳, 真係脆到好似食薯片咁, 用黑醋做特別香有D甜, 唔會得個酸味.另外, 叫了清炒蝦仁, 津白, 怪味雞, 雪菜毛豆百葉等. 均可試出廚師的巧手.薰蛋同餃都係唔肥仙子的至愛, 當然唔少得啦.睇相都見到流芯薰蛋, 真係好滑好香. 小籠飽皮薄透光, 用筷子夾起不爛, 果然手功到家, 唯肉汁較少. 但是個煎菜肉雲吞, 真係超好食. 他們用生煎飽的做法, 加上雲吞皮薄, 底部極脆.除了外皮, 內涵也很豐富, 菜肉之比例, 洽到好處, 包存到菜的清爽. 大力推介.最好係佢地對客人好有心, 好想食酒釀丸子, 可惜賣晒, 個女侍應問我地可唔可以等20分鐘,即刻去廚房為我地再搓粉做. 梗係好啦! 整晚都好享受, 不但環境雅緻, 美味更加上窩心. 激讚!

小籠飽皮薄透光, 用筷子夾起不爛, 果然手功到家, 唯肉汁較少.
但是個煎菜肉雲吞, 真係超好食. 他們用生煎飽的做法, 加上雲吞皮薄, 底部極脆.
除了外皮, 內涵也很豐富, 菜肉之比例, 洽到好處, 包存到菜的清爽. 大力推介.

睇雜誌講過, 一直都想試, 可惜上星期五無預先book位, 來到的時候已full house, 唯有book定尋晚再去試過.因為得三個人, 所以都唔可以點太多, 有人又敏感唔可以叫蟹, 唯有點幾款小菜.燻雞: 味道特別, 有雞味. 值得一試, 好似要預定的, 幸好昨天剛好有多, 沒預定也可以吃到...哈哈獅子頭: 肉嫩且新, 不錯.海年糕: 有點失準, 朋友午餐食過很好食, 所以再食炒年糕. 可惜昨晚的很一般, 年糕不夠入味, 切得頗厚, 朋友話和上次吃過的差很遠.小籠包: 相對其他食物算是全晚失敗之作.燴麵: 不過不失.如果喜歡吃滬菜, 這店確實可以考慮, 但看來師傅偶有失準, 要看看你的運氣和點那些菜.

係銅鑼灣收工,想食上海菜,記得有呢間小店,去。環境:地方小小,位置不多,坐得幾舒服。服務:得一名女侍應,人手明顯不足,不過好有禮貌,態度好。食品:花生~味道ok。醃蘿蔔~好正,有地庫嗰間上海菜水準,不過,濕咗小小,同埋,醃料沒有清除好,不過,真係好啱我口味。燻蛋~塘心有蛋香,不過煙燻味少咗小小,都好正。麻婆豆腐~味鮮、香、滑、辣,不過豆腐比較淡味(因為係x福類豆腐),但係好味到叫咗陽春麵嚟撈。陽春麵~食咗大半先記得映相,麵條有嚼勁,好食。煎餃~皮香脆,餡鮮,好。樟茶鴨~有的似臘鴨味,普普通通。酒糟丸子~丸子未煮熟,通知侍應生,佢立即取消,反應快,好。對呢間小店有好感,會再嚟。

 清炒雞毛菜:
據了解上海既雞毛菜原來係小白菜,不過比香港吃到的小白菜更小,食味真的與小白菜無異,只是較嫩口而已。這份雞毛菜真的很清淡,小油、小鹽,真的非常健康。一向覺得上海人菜種選擇很小,通常只吃到津白、馬蘭頭,誰知道上海人原來較喜歡小小的菜,當晚也有小菠菜供應。

 小黃魚:
兩尾小黃魚好像在暢遊中,可惜食味同食材均無特別之處。

 東坡肉:
濃油赤醬來形容東坡肉應沒錯了。肥肉不油帶爽,只略嚴瘦肉不太夠滑,說不出還欠了什麼,都是上海吉士東坡肉較合我心意。

 砂鍋煸尖豆腐:
用砂鍋盛上,有筍、毛豆及豆腐,調上淺棕色醬汁,食味順暢,材料雖完全是上海模式,但總覺帶點港式豆腐煲特色。

 醃篤鮮:

是一個好經典上海湯品,材料有鹹肉、百葉結、筍等餚製,色澤奶黃,係我喜歡上海獨有既濃濃鹹香味。

 鍋貼:
鍋貼不油,皮及饀均做到了水平。

 小籠包:
同樣達到水平,但以此店而論,食客總會把水平提升,所以還需努力找出突破。

 擂沙湯圓:
擂沙湯圓皮不夠滑溜,黑芝麻饀較死實,雖混入小花生粒,但也難彌補過失。

 季花糕:
是晚贈送既甜品。賣相不錯,透明季花糕不規則地擺放形成花狀。季花夠香,可惜魚膠粉可能手鬆了,質感有欠柔軟。

是次到知味舍,令我對上海菜改觀了。所謂濃油赤醬,是不全面的。其實上海菜亦有細緻既一面,濃淡得宜,不光是吃得人膩膩,以往令我不喜歡的過份甜味,其實是不正宗而已。

之前朋友去左依間餐廳啲野好好食所以上個月已經同屋企人去過1次食晚飯...今次同3個朋友去食晏,原來食晏食晚飯啲野都好好味架!今次訂左位去,保險啲。依間係1間私房菜形式既上海餐館,地方雖然唔太大,但坐落好舒服,又唔嘈唔焗促。餐廳姨姨今次介紹食炸脆膳,招牌抄飯,小雲吞...我再叫番上次既馬蘭頭同東坡肉(my favourite!)...再叫多個生煎包同嫩雞燴麵!太好味喇!的小雲吞湯底好靓,馬蘭頭切得好幼细,東坡肉啲汁好好好x100,份量啱啱好,肥瘦比例perfect!抄飯又香又好食!其他野都唔錯,只係略嫌生煎包唔夠juicy...啲服務好好..全部係姨姨但笑容親切,仲送左碟桂花糕添!!朋友都活下次一定再黎!東坡肉 馬蘭頭招牌小雲吞桂花糕顺帶一提,其實上次碟鰣魚都好好味!

The food is generally very tasty, however, the portion of the dishes are relatively small for the price. The staff are very helpful and nice however they are not very organized. May be they are newly opened, perhaps give them a few months, they have some improvement.

Another foodie gathering. One that I was reluctant to join. Apparently the chef here was formerly from Shanghai Fraternity Association (上海總會), which supposedly gives this place a certain amount of credibility. I had my doubts when we discussed the menu a few days beforehand, but I decided to show up at Zhi Wei Shanghai Restaurant (知味舍) anyway.The trio of starters arrived, and I smelled trouble immediately...Vegetarian goose (素鵝) - Not crispy. Vegetarian goose (素鵝) - Not crispy. 'Nuff said. Oh and there weren't enough pieces for everyone.

Deep-fried crispy eel, Wuxi style (無錫脆鱓) - probably the best dish in the entire meal. The eel was perfectly crunchy on the inside, even with the coating of yummy sauce on the outside. And the sauce... perfect balance between the sugar and the acidity of the vinegar.

Soy-marinated gluten with mushrooms (四喜烤麩) - we noted that the gluten was sliced into pieces with a knife instead of having been torn by hand... Nit-picking? Perhaps...

Tea-smoked chicken (燻雞) - this tasted pretty good - lots of smoky flavor and even the piece of breast meat I had was soft and moist. But it seems more Wenzhou (溫州) than Shanghai to me...

Steamed Reeve's shad with rice wine (清蒸鰣魚) - a disaster. The fish was presented with slices of ham and mushrooms prominently displayed on top, then the same garnishes were placed on top of the individual servings. Those garnishes are used to provide flavors to the fish... one doesn't really eat them... Either they don't get it, or they think we have no idea how Reeve's shad should be eaten. The best part of eating this fish is the scales, which are served with the fish. One is meant to suck on the scales and get the layer of skin and fat underneath. Unfortunately the fat has been cooked away, and I was robbed of this pleasure. I know that some people had heaped praised on this dish because of its "good value" - since it's roughly 2/3 of the price compared to some of the established restaurants... but so what?!

Stir-fried young hairy crab with rice cake (毛豆螃蟹炒年糕) - another disappointment. For me the dish has never been about the crab, but the rice cakes in the yummy sauce infused with crab roe. The rice cakes were flabby - there was simply no "bite".

We ordered steamed rolls (蒸銀絲卷) to wipe up the sauce, but I took one look at them and decided not to touch them. The skin told me that they were very much over-steamed and unlikely to be yummy, and I wasn't wasting precious calorie quota on them.

Initially there was talk of ordering the steamed flower crab in chicken fat and Shaoxing wine. Mrs. Hoover and I objected strenuously, as the dish simply isn't Shanghainese! The fact that it's even on the menu is truly disturbing.

Crispy eight-treasure duck (脆皮八寳鴨) - skin wasn't crispy...they were soggy. 'Nuff said.

Double-boiled soup with Chinese cabbage and ham (火腿燉津白湯) - this was OK. Didn't touch the ham but I think my fellow diners weren't too happy with it...

Braised pork with bean curd knot (百頁紅燒肉) - initially we were told by the restaurant not to order this dish, as it would be a duplication with Dong Po pork (東坡肉). Mrs. Hoover and I were like... huh?! They may both be made with pork belly, but they are most definitely not the same. We insisted on having the dish, and realized why the restaurant told us the two dishes would be the same. While the pork is braised, this dish is supposed to taste savory. The chef simply used way too much rock sugar and the dish now tasted sweet. Sorry, chef...the Shanghainese may have a sweeter palate than most, but not every Shanghainese dish is supposed to be sweet. The bean curd knot was also too soft and not chewy enough.

Dong Po pork (東坡肉) - the pork had lots of soft, wobbly fat with very little lean meat. Both the skin and fat melted in my mouth, which was nice. But something about the color bothered me a little... the fat was just a little too pale, like it hadn't been marinated or braised enough. Taste-wise this was sweet as I expected.

Stir-fried seasonal chili eggplants (油爆尖椒茄子) - not sure it's typically Shanghainese, but it tasted pretty good.

Mini wontons (餛飩) - pretty dainty, and I'm starting to taste more of the skin than the filling.

Osmanthus jelly (桂花糕) - pretty nice and tasty.

The room was pretty warm and I was a little uncomfortable, which didn't help with the overall dining experience. The meal was pretty disappointing, especially given the pedigree of the chef. I guess I'll just go back to my regular Shanghainese joints...

素蒸餃

好有咬口,而裏面的菜有清甜味道,本人認為這是實實在在的正宗上海素蒸餃。


這店的上海菜真的好好食,本人十分滿足。一定會再去!

Like I said earlier, how much I was disappointed at Shanghai Fraternity Association 上海總會because of its poor performance. As I heard the rumor that the top chef of Shanghai Fraternity Association joined this newly opened restaurant in Causeway Bay. A person like me who likes to eat, I definitely went and tried out the food at this Zhi Wei Shanghai Restaurant 知味舍. I m a person who have fully passion on food. I look for the best and hopefully my feedback would give all of you some good suggestions

As Last Sunday I tried a poorly performed Shanghai Cuisine at Shanghai Fraternity Association, I swear I must tried out some good Shanghai Cuisine, and so on last Wednesday I came to知味舍. I gotta say, this is highly recommended, they didn’t disappoint me and however I think I love the food there now.
四喜烤麩

This is a Shanghai cold dish. It smells good and the taste is not too wet or too soft which is just right. As I know this dish needs a lot of skills, I would say, they nicely performed.
怪味雞

This may not be my favorite dish because I don’t like food with peanut, but by the taste, I know they did their best. This dish is some peanut and chili and chicken breast mixed together. However, my friends like this dish a lot.
脆鱔 the crispy eel

I have always loved this dish. As I read from magazine, the former top chef of Shanghai Fraternity Association can cook the best crispy eel, I ordered and tried.
It smells so good and it truly crispy and you can still taste the sweetness and sourness of the source, the eel does not smell like dead fish at all. I LOVE THIS DISH
煙燻雞 the smoked chicken

Besides the crispy eel, I would say this is also one of the best dish in the restaurant ( even though I didn’t try all the food there, but to me, it is one of the best!)
You can truly taste the strong flavor of the fresh chicken. Also, as the manager told me, the chicken is smoked with a special Chinese flower, this chicken smells just good and tasty.
東坡肉

I always think this is really heavy, to be honest, this dish is heavy, but they cook it very nicely. The fat meat totally melt in your mouth when u eat it. The source isn’t too salty or sweet. It is good too!
清蒸鰣魚

This can be called my FAVORITE fish in Chinese cuisine. For you people who loves to eat would know this dish usually at some other Shanghai Restaurant, would cost you $ 800 - $1200 , for example like Shanghai Fraternity Association 上海總會, 留園 ….) however at 知味舍, its only $ 600 and it can be eaten by 7-8 person. This fish is so tasty and I can taste the sweetness and good smell of both the fish and the Chinese wine. You can rarely try this fish in Hong Kong, but only in some of the Shanghai Restaurant. This is HIGHLY recommended!!!!!

After this dinner, this surly is one of my happy experience of Shanghai Cuisine. I m sure this newly opened restaurant will be one of those famous restaurant in Hong Kong one day. Here I give my best wishes to this restaurant and I would like to thank you the chef who made good food and an enjoyable dinner to me and my friends.

We booked this place to try cause we heard over the radio saying how great this place is, so then we decided to book on a weekend, the place was full.It was a total gimmick! and for sure it was an advertisment cause it didnt meet up the basic standard. For the quality, this place is totaly overpriced!!The "yau bao ha" ,the outer shell supposed to be crispy,it wasn't. so we ended up eating 2 pieces...such a total waste.The "honey ham sandwich", the bread was so thick,and the ham not tender plus t

睇到某飲食雜誌話呢間餐廳大廚以前係上海總會做,於是慕名而來試下。我同老公兩個人叫咗四喜烤夫、雪菜毛豆百頁、東坡肉、蔥油拌麵同生煎包。四喜烤夫暖暖地,但我其實鍾意凍d,味道一般,唔夠東來順好食。雪菜毛豆百頁,百頁好好食,唔似出面的又厚又硬。東坡肉,真係一層脂肪一層肉,汁做得好好味,但真係好肥!蔥油拌麵,麵同汁的味道唔錯,但蔥唔夠好味,始終係香港好難搵到有上海做得咁好...生煎包, 層皮好厚,但個底就煎得好香。另外,一黎就俾碟超細的花生同醬蘿蔔,盛為20大元。不過食物整體都算唔錯,可以再試。
