脆皮粒粒炸豆腐,新鮮炸起熱辣辣,撒咗自家製飯素,風味十足。面頭係凍冰冰自家製醃泡菜+紫椰菜絲,加埋越式醬汁、蘋果洋蔥汁等等,OMG!淡淡嘅酸甜味+微辣醬汁,爽脆椰菜絲x軟綿豆腐,熱炸豆腐x凍椰菜絲,好難唔好食架喎~可惜豆腐炸衣偏硬,我諗係為左保持脆度,但唔影響整體體驗🤤

人參雞湯拉麵,濃郁嘅雞湯>>>人參味,湯頭係清爽型但雞味依然重。雞叉燒更加出色,雖然叉燒片薄,但食到雞肉味,而且肉質鮮嫩多汁。最令我意外係醬油漬溏心蛋,蛋黃熟度完美,醬油漬令到連蛋黃食落都好似有陣淡淡醬油香。但係,好可惜拉麵麵條一般般,同雞湯唔夾,嗦麵嘅時候體驗唔到湯頭嘅美妙。

One of the BEST fusion beef tartare and fried chicken in Sai Ying Pun😍


Visited Dam:a when they first opened back in November 2021. This Korean x South African-inspired noodle bar is in a quiet and secluded alley, but their food is definitely full of surprises and bold!


This colorful plate of Beef tartare is a must-order!!✨They used South African A5 beef and added gochujang (Korean chili paste), cured duck yolk crumbs, and seaweed purée to create that umami flavor to the dish😍 Love eating the beef tartare with their crunchy squid ink chips as well!


Although Dam:a and o.b.p belong to the same restaurant group, I highly recommend the fried chicken at Dam:a over the latter. The batter was thin, crispy, and flavorful; the meat was juicy af!!! Not to mention that they did a marvelous job with their yuzu radish pickle and kimchi coleslaw - appetizing and def reduced the greasiness of the fried chicken!


The Sullung noodles were alright. Unfortunately, the beef broth was a bit too 「蘇」for my liking but this dish was more subtle as compared to the other dishes. I also prefer my noodles cooked in al dente but the consistency of the egg was perfect! I would save room for other shared dish and skip the Sullung and es such as their Dubu Kimchi and Hairtail sourdough for sure cos they looked delish😋

呢個Beef Tartare同平時西餐廳有啲唔同~
南非和牛入面混入咗啲紫菜碎、鴨蛋黃同韓式醬料 味道好濃郁
中間仲有dry aged 咗蛋黃 成個感覺好新穎
旁邊仲有用西米同墨汁製作而成嘅脆片

拉麪清清地口感幾好~

The super thin crunchy buttermilk batter is a winner and spot on with the furikake seasoning. The chicken could use some marinating for more flavor in the meat, but the gochujang condiment made up for it. What let it down is the chicken itself, not juicy enough and just not the best chicken for deep frying perhaps. The kimchi coleslaw on the side is a winner!

🍜Sam Gae ramen has gone beyond my expectation, broth was nourishing and solid and chicken char-siu was succulent and tender👌🏻yet the taste of ginseng could be more prominent.

🍚Jeonbok “Juk” - risotto with smoked abalone bites, topped with ricotta croquette. It was pretty unique and creamy, but it was a bit heavy to finish up the whole dish.

— This fiery noodle dish is no joke and definitely lives up to its name! The spicy chicken sauce was super flavourful with a nice kick to it. Their house-made furikake helps elevate the flavour and adds a savoury element to the dish. Loved the duck egg on top which added a creaminess to the noodles and brought it all together. Noodles were perfectly chewy and cooked to an al-dente texture.

— Probably my favourite dish from the meal and honestly exceeded my expectations! This elevated version of the traditional Korean Ginseng Chicken Soup combined elements of Japanese ramen and does not skimp on flavour. The chicken broth is rich with bold flavours. Personally thought the ginseng taste could’ve been more prominent though. The chicken char siu was unique and super tender. This hearty bowl of noodles is a must order for all ramen lovers.


Pic 4️⃣: Fried Chicken - $148 hkd 🍗
— Coated in a buttermilk batter, the chicken remained tender and flavourful. Made fresh to order and served to your table piping hot. Loved the addition of their house-made furikake on top to give it an extra umami boost to the dish. The kimchi coleslaw on the side was equally as delicious, likewise with the spicy dipping sauce which went perfectly with the chicken.


📍Ambiance: restaurant is quite small and seating isn’t the most comfortable, better for drinks and snacks, staff are super friendly though!
⭐️Would visit again?: Yes!

超 濃 味! 我wow咗一聲嘅韓式鮑魚粥
雖然menu寫risotto 但我覺得飯粒嘅口感又未到咁有咬口
鮑魚不嬲都係一種咬口大於鮮味嘅海鮮
所以呢個重味在於調味 同麻油 芝麻 紫菜一齊食嘅香
鮮味只係頭嗰幾啖食到少少 但就做到每啖都咬到鮑魚粒!
上面仲有個ricotta croquette 極creamy
唔建議整爛佢撈落粥 因為本身碗嘢太重味
1分扣咗喺真係太鹹到 適合2-3人分會冇咁濟

店員就話可以試呢個輕量版
味道不錯 主要用飯素調味 皮薄肉嫩有肉汁
但成個感覺似日式炸雞多啲😂
特登想讚下個醃蘿蔔! 平時唔鍾意食
但呢個有柚子味 食落多咗種清新解膩感

SPICY CHICKEN SAUCE, FURIKAKE, DUCK EGG

I especially loved the beef tartare, which mixed duck egg and Korean spicy sauce ( GOCHUJANG), if u like the taste of this sauce, u would love this dish too. (Some ppl might find it a little salty tho, but totally fine with me)
Didn’t order their ramen as I’m not a fan of soup noodle, I was so tempted by their dry mix noodle tho.. the spicy chicken noodle was so good! The crispy tofu with kimchi coleslaw was great too, must try!

Overall, I think everything was up to standard, totally would revisit.
(FYI, some ppl may think the dishes there are too salty, just I personally love strong flavour and the spicy Korean sauce, so u probably won’t like it if u are not a fan of that)

When I heard there was a new fusion noodle bar in town opened by the same restaurant group that owned obp, I knew I had to try asap! I had booked online just to be safe, thank god it wasn't walk-in only like obp. The restaurant was in a slightly covert location in between sheung wan and sai ying pun. The shopfront was... unassuming to say the least, it didn't even have a sign yet (the chef said they're working on some big neon sign), so it was a little difficult for me to locate it at night.My p

My partner had secured bar seats for us (yay!) so I got to watch all the action that was going on in the open kitchen. The restaurant is basically identical to okra which used to reside here before they closed down. We ordered the beef tartare, fried chicken, sam gae and spicy chicken noodles for the 2 of us, one of the chefs were kind to let us know that they had a smaller portion of the fried chicken (4pcs boneless thigh) for $58 as he thought we may have ordered too much, but we decided to go with the original portion anyway.

I wasn't sure if I was just hungry or the fact that I was sitting there watch all the cooking happening but service felt a bit slow, which was understandable since it was still their soft opening and they were a little understaffed (the chefs were also the waiters and cashier). The beef tartare looked mouthwateringly good as they tossed the raw beef in the spicy gochujang sauce, and then proceeded to meticulously arrange dollops of yolk, seaweed puree and micro herbs on top.

The chef had advised us not mix it and simply scoop the tartare onto the sago chips to enjoy, and if it wasn't salty enough (it was) we could eat it with the salted yolk floss(?) in the middle. I loved the gochujang based sauce they tossed the beef in, but I found it a tad overpowering as the texture and flavour of the beef was masked. Because we didn't mix it all up I was able to sort of distinguish the seaweed puree and duck yolk, overall it was a very satisfying mouthful combined with the crunchiness of the sago chips.

I am pretty picky about fried chicken in general, achieving a crispy exterior and keeping the interior juicy should be the minimum standard and the fried chicken here seems to tick the box. There were 5 generous pieces that were coated in furikake, they were piping hot when it came to the table, and super juicy on the inside. The furikake didn't seem to impart much flavour, I find myself reaching for those delicious sides - the kimchi coleslaw and pickled yuzu radish - in between bites as I found the flavour of the fried chicken a little... generic? To me this dish heavily relied on those side dishes and the spicy sauce to give it character.

As I watched the chef finish off the chicken noodles with some freshly ground ginseng, I was very excited as I took the first sip of the chicken soup, expecting a ginseng-chicken flavour bomb to hit me, boy was I disappointed. While the soup had that jammy texture which tells me it's rich in collagen, it tasted just like a homey chicken soup to me. It wasn't bad by any means, it just lacked that kick of ginseng I was expecting. I guess I was looking for something that sets it apart from all the other chicken ramens out there. I suspect the chef had decided for it to have a very humbling gingeng flavour to accommodate the locals' palate. The chicken charsiu was succulent but the noodles didn't wow me.

While the beef tartare was still good despite having too much sauce, I couldn't say the same for the spicy chicken noodles. The plating looked promising, I wanted to like this so much. I had a taste of each component before mixing it all up, it's basically a korean version of a mazesoba, which is a soup less ramen with toppings like furikake, bonito powder, spring onion, seaweed etc. Unfortunately after the noodles were thoroughly mixed, everything was lost to that spicy chicken sauce. I think this dish would benefit with larger cuts of the chicken so it's more distinguishable, the intensity of that sauce could be taken down several notches to let the other components shine, as well as the option to add additional condiments as you would enjoy a bowl of mazesoba.

Overall, there were some creative ideas behind the dishes but they could benefit from better execution. As a restaurant that labels itself as a noodle bar, I was surprised to see packaged noodles and udon being used as I observed the kitchen. There was nothing wrong with the noodles, they were cooked well enough, but having noodles made in-house would definitely benefit the dishes because you would be able to alter the thickness, length, texture etc. to work with whatever you are serving with the noodles. I have to commend the chef/owner for trying to engage in conversation with customers to acquire feedback for the food, he seems like a passionate person who genuinely wants to improve his craft. I am excited to see where this noodle bar goes!

吃了绝不会后悔的一碗碳水!不要犹豫,请干脆利落地拌开,虽然很上镜,但是拍久了面会坨!

蟹肉、蟹籽、炸蟹三重奏,份量很实在,口感各有各的妙,融合在一口,简直是鲜掉眉毛!
·
乌冬面韧性弹牙,粗细适中正好能挂上浓稠的酱汁,不过建议分享,一人食吃到后面会有点腻。

E款人參雞湯拉面係小妹最想試嘅一道菜, 雞湯顏色清澈, 入口清甜, 味道係非常舒服嘅感覺, 好順喉, 廚師特意減少其它藥材適合番香港人口味, 雞叉燒用左雞肉雞脾雞皮拆肉再整成叉燒, 非常有心機, 廚師仲係上面磨左新鮮人參, 雞叉燒鮮嫩帶陣陣人參香味, 全蛋麵口感彈牙, 整碗麵所有野都配合得岩岩好!
