finally got chance to drop by for a colleague's promotion drink. Environment is good with modern deco and lots of sofa. Also outdoor rooftop is spacious though no much view but attract lots of foreigners. some of colleagues even smoke cigar there. Drink list is just normal and too simple and plain. I only got one smoothie (mango mania) which was really bad with so many ice inside, even hard to drink using stroll. The Champagne served with small firework, fancy! Snack food- fried shrimp is yummy.

Shore is a combination of bar and steakhouse. Downstairs=Bar Upstairs=Steakhouse.We arrived pretty early at around 6 pm and were the only people there.The service is as expected.We ordered Rib-eye and Tenderloin Wagyu. Both medium.Wagyu tasted good and may be too much for female.We ordered cream spinach as side dish but it turned out to be not a good choice. Straightforward food, nice ingredients, but portions way too big. If you are going to order a main, don't order a starter. Or maybe order one starter and share. And small mains. 第一次黎呢度,上了樓上食lunch環境幾寬敞優雅,充滿格調餐廳內還有裝滿紅酒的玻璃廂,突出其扒房的形象是日menu叫左Soup of The Day, Rangers Valley 300 days Grain Fed Strip不是新鮮出爐,有d凍外皮不夠脆,內裡還夠軟熟配上olive oil同 vingear,但不太突出好香濃的粟米味,絕不是罐頭湯級數!湯好滑,飲落很有層次感甜得來帶出濃滑的粟米香!不錯!叫了Medium。Rangers Valley牛隻是經過三百天穀飼及自由放牧,肉味濃郁多汁牛味濃,油花分布均勻,更沒有酥味,幾稔!薯條更非常香脆可口,簡直食不停口!少咸的感覺再加上茄汁,配搭適宜。餐飲叫了凍檸茶吃到飽一飽,喝一杯凍檸茶可謂舒暢!夠檸味!環境同食物同比5分,唯美中不足的是上菜的速度較慢!

叫了Medium。Rangers Valley牛隻是經過三百天穀飼及自由放牧,肉味濃郁多汁
牛味濃,油花分布均勻,更沒有酥味,幾稔!
薯條更非常香脆可口,簡直食不停口!
少咸的感覺再加上茄汁,配搭適宜。

餐飲叫了凍檸茶
吃到飽一飽,喝一杯凍檸茶可謂舒暢!
夠檸味!

環境同食物同比5分,唯美中不足的是上菜的速度較慢!

Work next door so went to Shore to meet with a couple of co-workers. The lunch menu is typical set lunches; chose a set meal with a salad and a main course. The salad was disappointingly small. The chopped egg salad with avocado and sliced ham was lacking. There were only bits of avocado and the sliced ham came straight from a bag. At least seperate the ham so it doesn't bunch up into clumps of sliced ham. As for main courses, the choice was chicken or salmon. I choose the grilled salmon

As for main courses, the choice was chicken or salmon. I choose the grilled salmon steak but was disappointed as well. The fish was slightly overcooked and became dry. I was looking forward to the tenderness of the fatty fish but was not to be.

The meal was slightly under $200 which was sort of pricey for lunch. The food quality definitely did not justify the premium.

The decoration was nice and chic, but that's about it.

一塊價值五百餘元的牛腰脊肉,當然對它有所寄望。跟之前的「小肥豬」一樣,廚師沒有特別調味,只將牛腰脊肉原汁原味地燒烤,火喉十足,外層做得香脆而內裏肉質依然嫩滑。只可惜牛肉的質感略為粗糙,始終不及頂級扒房的貨色。

餐廳格調優雅舒適,價錢亦不算高昂,以酒吧餐廳來說,的確是中環區上班一族不錯的選擇。不過服務方面略嫌較機械化,食物也有進步空間,例如牛扒的質素並沒想像中的優質。

主菜大家也選了大蝦意粉,以茄醬作為意粉的醬汁,酸甜又開胃.蝦肉是新鮮貨色,爽口鮮甜.意粉索汁力強,但可以做得好一點,這天的意粉有點過淋,沒有Al Dente的感覺.

又到了好友間的"過期生日飯補祝活動"按照慣例是生日後三個月左右才吃!知道幾位也是喜歡吃牛扒,故選了這家價位不高而又有自家熟成牛扒供應的店子來一試。店子已開業了一段日子,各部門運作應該已上了軌道吧!樓上用餐區的環境是不錯。這個麵包籃是可以直接跳過的項目,不熱只是室溫、多款也是硬而不脆及味道帶酸、牛油的味道極淡。Staek Tartare----肉是切得夠仔細沒有一絲筋膜在內,調味亦不錯但就是入口欠缺了冷的感覺!吃這類生肉如雪凍一點的話,吃起來整件事會有很大分別!Prawn Cocktail----很少會做得太差及能令人能下印象的一款小食。Lettuce Heart With Crab----萵苣本是爽脆帶少許苦味,雖吃不出和蟹肉何關連但配上了用牛油果打成的沙律汁總算是不錯.Mussels----最大路的煮法:蒜蓉加白酒洋蔥,青口質素只屬一般,不是煮得太熟變韌而是肉質本身欠彈性。Parma Ham----近年只對iberico有興趣,反而配菜有略烤過的蜜梨甜美多汁及gorgonzola芝士的味道更能吸引到我。Kurabuto Pork Rack----這件厚切的豬扒用刀切下已感到是非常軟身

三款是日精選Striploin,Kobe Wagyu Rump,Rib-Eye----三款也是要了medium rare其中以rump的表現最好,肉味夠濃之餘肉汁亦豐富!Striploin吃起來是較結實,欠缺了嘴嚼時油脂所產生的油潤感。Rib-Eye向來不是自己所喜的部位,寧可要西冷的濃味或牛柳的軟淋。試了一小片只可說是恰如其份。

Chocolate infatuation----如像吃90% 可可濃度朱古力的那種感覺。Warm salted butterscotch pudding----少少鹹的味道比之前的甜品來得更合心意,冰凍雪糕加上軟綿的布甸感覺是頗特別!

勿論這裡的自家熟成牛扒是否到達食客心目中的級數,但起碼店方是有心把這技術帶到香港,肯花金錢人力去做這件事!這點是絕對值得支持和欣賞的。這裡是免收加一服務費,侍應盡責的表現郤是值得多付一點小費。
感謝做東的友人們。和自己真心喜歡的朋友聚餐的話,是好是壞吃什麼也是愉快的經歷!

Pan Roasted Fresh Fish (Black Cod) with Pepper Fondue, Green Olive Vinaigrette and Anchovy Fritters
The presentation swept some points away, but luckily, this turned out to be an it-tastes-better-than-what-it-looks-like dish. The texture of the fish was bouncy and smooth with good flavours, but please don't try the anchovy fritter on top - unless you are a big fan of mushy salted fish. Ew-Yuck!

Rangers Valley Wagyu
This was recommended by the waitress and I regret I trusted her. She said it was a young beef with good tenderness and flavour. After taking a bite, all I had was question marks. The meat was rough, chewy and overcooked. I was pretty upset because I remember the beef I had on my previous visit was good and tender so I know that this place has good beef. It is just that this waitress got us the wrong thing...*sobs*

Anyways, I can recommend you to order the Butchers Cut when you come here. They will serve you 3 different types of beef on a wooden board, and I remember I liked all the three types last time I had it. Too bad i forgot to picture it but yeah, go go go go for ittt!

PS! The french fries are goooooood! I got severely addicted to them...hehehehe

係一個泰色風味既SALAD, 有鴨絲, 橙肉, 沙律菜, 乾蒜片, 檸檬葉...有一種在泰式公仔麵既香料味。
整體上較惹味, 但個人應為放在沙律上比較奇怪...

先講主角蘇格蘭鴨巴甸牛扒, dry-aged, medium-rare, 肉質非常腍滑, 沒有半點筋, 燒得很好, 沒有overcook, 不過可能對dry-aged 既 牛扒期望太大, 牛味不算太濃郁, 唔算係我食過最好食既牛扒。

相反kurobuta 黑豚 就比想像中好好多, 豬扒差不多有一吋厚, 不過非常腍, 兩刀就可以切開, 豬味濃郁, 而且只係牛扒既一半價錢, 相比下豬比牛好。

由於樓下係酒吧, 由一條樓梯連接上扒房, 所以人多時比較嘈雜, 不惜合要浪漫的情侶。

We booked an area at the outdoor balcony, nicely decor except the buildings around. But this is Central, no complain.They have several round sofa seating areas with some long tables side and small tables in the middle. Wine selection is limited, but prices are attractive. We ordered V.C., which is only $950 per bottle without service charge. Lovely price on Christmas EveAs this is an outdoor area, so we have our Champagne flowing and Cigar to celebrate Christmas! 偶問要風乾幾多日,才可以賣?他說:「無法可依,牛品種及部位不同,要吃得多才能掌握他們的脾氣,一般來說兩至三星期,要在特定溫度及濕度下進行」。那包含著牛柳及西冷的T-bone最難搞?他想了想,道:「不難,只要捨得損耗就易搞了。」

做了朋友,話題就好說得多了,偶問他在外國直接入口風乾牛肉,不就那麼麻煩?他笑說:「外國牛扒有質素保證,但價錢太貴了,Shore走的是大眾路線,自設風乾櫃,成本平了,客人亦吃得開心。」

今天與扒緣慳一面,但上了一課活動教學,吃到老學到老真是大開眼界,走前跟Jason握了手,說會再來試他的炭爐烤牛扒。

Shore at Central’s ‘L Place’ has the potential to be very good. Front of house is courteous and friendly, and the venue itself is stylish and elegant, with ambient tunes playing throughout the restaurant, which includes a large outdoor lounge area. However, there were a few basic errors with our meal that stops me rating this place higher for now.

To start, my wife and a friend shared a salad of tomato, roasted beets, ricotta, almonds and herbs. It looked good and, according to my wife, tasted great. So far so good. To follow, they both ordered poached eggs with smoked salmon on a sweet corn fritter. Meanwhile, another friend and I both ordered a grilled breakfast. Additionally, I ordered a side of steak fries, which wasn’t on the menu, but the kitchen willingly obliged.

Our main complaint was that the hot food took quite a long time, and wasn’t particularly hot when it arrived. The grilled breakfast consisted of a decent amount of nice crispy bacon, a couple of sausages, two poached eggs, half a grilled tomato and two slices of toast. Everything was a bit cold. In particular, the toast was cold, rock hard, and dry (we did eventually get butter but had to ask). The temperature of the food wasn’t helped by the fact that the AC was very high. My wife had the exact same grievance with her dish. It tasted fine but was cold (cold poached eggs just aren't a pleasure to eat!). One other gripe was that the music was a shade too loud. Our request to lower the volume was heeded, but it gradually crept back up again after a while.

I like the menu at Shore - I really ‘get’ the concept of stripping back the dishes to showcase the high-quality ingredients. I suspect that the restaurant is suffering from one or two teething problems but that these will be ironed out in time. I’ll almost certainly go back at some point - I’ll probably wait a while though. It’s worth noting that service isn’t automatically added to the bill – a commendable policy, in my view, and rare as hen’s teeth in Hong Kong.
