餐前小吃共有四款,分別是煙燻溏心鵪鶉蛋、魚子和牛taco、椒鹽白子瑩光魷魚及鹹魚白菜配菜乾湯。


去年吃鹹魚白菜覺得驚為天人,不但好吃,presentation也特別。今年呈現的方式稍有變化,味道不及去年用魚皮上那麼突出。不過今年那碗菜乾湯則極度香甜,是倒出來已經有菜乾香,讚👍🏻。


四款小吃的擺盤、顏色、意思(如中國人飯前喝湯)及味道均好,為其後的菜式活潑地揭開序幕。

三道海鮮過後,開始換換口味。過場的菜式是燴蘿蔔上配流心蛋。蘿蔔先用滷水炆再炸脆外層,感覺有點像東京tempura kondo 的炸蕃薯,外脆內軟,再配上蛋及有醋的老雞湯,既濃郁又帶出層次,好吃。

接著上場的是醉鴿。我不是特別喜歡家禽,不過這個鴿很軟,也有酒味,用手吃鴿肶也是不錯的。

吃完肉,來一道甜甜酸酸的梅sorbet 清清味蕾,好吃又懷舊!


最後一道熱菜是叉燒配XO醬炒飯。叉燒非常鬆化,外層微焦,甜度剛好。炒飯用了日本米,所以帶黏,不過就加了茨實增加咬口,份量小小,剛好。

就食物而言,十道菜的鋪排、食材的配搭、技術、味道、presentation 均較去年更顯成熟自信,就如大師般行雲流水。


至於服務及環境方面沒有什麼挑剔。這次選了sofa 位,坐得舒服。介紹餐單及菜式都非常清楚,當然Vicky 親自過來介紹餐前小吃及中段的蘿蔔,也讓人感到誠意。另外不知是否知道我們來過的關係,有些菜式或是生日蛋糕都用了不同的演繹手法,令人還有新鮮感。


唯一要說的是,其實前段上菜稍為快了一點,但他們自己注意到,並詢問我們要不要停一停,所以是非常用心的。


總括來說,去年初嚐VEA就覺得他們是明日之星,果然今年既奪星也進入Asia Best 50。今年再來更覺得他們已遠遠拋離其他名店,相信更上一層樓是指日可待的事。

Started with various bite sized snacks including a smoky soft boiled quail egg, elegant caviar and cheese, a sophisticated play on deep fried squid with salt and pepper, and a fun display referencing a classic Cantonese song (they even attached a music box to the plate!) Following the snacks are 8 courses of extravaganza with Chinese twist. The first course brought together my absolute favorites - langoustine and sea urchin, topped with smoked cauliflower cream and Sichuan lemon zest that brought an unexpectedly lemongrass aroma.

Next was a flavor bomb and a modern take on a Sichuan signature dish - sour and spicy fish with fermented cabbages. Sichuan flavor definitely came through with the right balance of acidity and spiciness.

My favorite dish of the night was hands down the roasted sea cucumber - very Chinese style dish but cooked with finesse complemented by a rich and creamy female crab sauce. The truffle fried dough was such a clever touch that truly embraced the chinese and western fusion theme.

I was immediately captivated by the egg and daikon dish with an extra creamy Japanese egg yolk on top of a crispy fried daikon, dressed with an rich and intense daikon sauce.

A creative and well executed rendition of Cantonese ‘char siu’ (bbq pork) rice. Cooking short rib in bbq sauce deliberately mirroring the traditional cantonese bbq pork (char siu). The beef was cooked to perfection, super tender, and successfully recreated char siu flavor. While fried rice with xo sauce is an ordinary chinese dish, they managed to put a brilliant twist to it by replacing white rice with sushi rice, adding much texture and chewiness.

Two desserts, first with an incredibly refreshing celebration of chinese celery with a celery ice cream paired with coconut foam and green apple. Then came the indulgent one with custard cream and flaky puff pastry paired with sea salt ice cream and milk crisp. Such a genius flavor combination. The sweets didn’t end here, we get a selection of fresh strawberries from Japan (not strawberry fans though 🤭) and petit four presented in a layered gift ball. Even the petit four embraced the fusion theme with asian flavors incorporated in french desserts, tofu pudding choux puff and salted duck egg madeleine.

Very impressed by the innovative, modern yet playful expression of chinese and french cooking. Shout out to the Cantonese cuisine reference made in the meal, bringing our awesome flavors to the international stage.

Parents had eaten here 2 times and they said I must try this AND they went with me again. So VEA must be good, right? It was nicely done. It’s a place to impress the ones that love trying new things. This Michelin place will REALLY feed you! I could barely fit in the last 3 desserts (yes, there were 3 parts to just the desserts). We were the first round of guests on a weekday so we have the luxury to get the full attention of the staff and get more explanations on every course.

The most notable dish was the roasted sea cucumber with mud crab, ginger and 22yrs hua diao chinese yellow wine sprayed from a perfume bottls. The usually gelatin like sea cucumber was slightly crispy for a change in experience. I don’t prefer beef tartare so they replaced the course with BBQ pork of the “first cut 天下第一刀” (meaning the cut that💀put the 🐽 to “sleep”. 🥺).


Everything look Western but taste Chinese. It almost taste like “home”. Hawthon scone as a complimentary for takeaway at the end (breakfast tomorrow~).

Make sure you book a table for this place as you're very unlikely to find a table if you just walk in. Also, as you might have to wait at least a week and it certainly isn't going to be the cheapest meal you have, you are best advised to keep this to those special occasions. If you're a baller and want to take a date here, then be my guest, but you better make sure she's worth it! I took my girlfriend here a while ago, but unfortunately I can't find the photos we took from the whole night. I took my girlfriend here a while ago, but unfortunately I can't find the photos we took from the whole night. Basically, it's a 9 or 10 course tasting menu, whereby each dish has a unique well-balanced flavour and will just scintillate your palate in a way you cannot anticipate or imagine until you take that first bite. Even things that you wouldn't usually eat or have reluctance to eat (e.g. sea cucumber), I would say you need to still try it! 

Each dish is beautifully presented; either set on an eye-catching plate or in a scenic setting like a beach or a garden to set the mood and take your eyes to where your taste buds are happily about to go. 

I remember there was a meringue that was made in front of you with some liquid nitrogen, which was a great touch. Also, as we mentioned it was for a birthday, they also gave us a cute, personalized, rich chocolate pig. We felt bad about crushing the fella as we dug into him, but it was for a good cause.

Unlike many of these gastronomic experiences, we were both satisfied with the amount of food and were close to bursting by the end of it, but it didn't feel like we were forcing our way through the dishes at all.


FINAL VERDICT:
 FANTASTIC EXPERIENCE FOR SPECIAL OCCASIONS!

In my opinion, 1 starred VEA is one of the restaurants in HK that I believe every local and tourist should visit if they get the chance to. Seated on a continuous bar table that provides great views of the working chefs, you can observe how busy yet quiet the kitchen is. This was the mushroom with yeasted cauliflower and seaweed "moss". Love the plating here, it looked like some sort of wild overgrown forest. Most importantly of all, the taste was impeccable as well.

Hands down favourite dish of the night - the egg with truffle, parmesan and caviar. I loved all the rich flavours incorporated into the dish and the sauce was hellishly addictive. I'm so glad we got the dough rolls to mop up every last drop of sauce that I had.,

For the desserts, we first had the strawberry with cheesecake, yogurt and almond. We were allowed to choose 1 type of strawberry from the wide selection from different areas of Japan and Korea. I chose the one from Kumamoto.

女朋友生日。請她一頓難忘的晚餐。不多介紹background, 都知今晚係食 French and Chinese fusion cuisine. 今晚有8道菜。Chef Vicky 亦介紹了 off menu的8年非洲花膠,及當造白松露(每道另加$780,事後覺得花膠那道比較好味) 。菜式配合埋由著名分子調酒師Antonio 的7杯 cocktails(每位 $680,值得!最衰唔夠位放相,杯杯都超靚!) 。今晚的美食是100分的,意境也值100分(第二道菜是鹹魚味蝴蝶餅, 配白菜湯), 在鋪滿秋葉的音樂盒上, 還留著兩張字句 : 鹹魚白菜也好好味. 這餐鹹魚白菜承惠$7000...😅

不多介紹background, 都知今晚係食 French and Chinese fusion cuisine. 今晚有8道菜。Chef Vicky 亦介紹了 off menu的8年非洲花膠,及當造白松露(每道另加$780,事後覺得花膠那道比較好味) 。
菜式配合埋由著名分子調酒師Antonio 的7杯 cocktails(每位 $680,值得!最衰唔夠位放相,杯杯都超靚!) 。今晚的美食是100分的,意境也值100分(第二道菜是鹹魚味蝴蝶餅, 配白菜湯), 在鋪滿秋葉的音樂盒上, 還留著兩張字句 : 鹹魚白菜也好好味. 這餐鹹魚白菜承惠$7000...😅

慶祝男朋友生日,早一個月到網上book 位。佢有唔同既time slot 同menu 都會係佢個website 見到💓一出lift其實已經見到d bar枱同埋個開放式既廚房,睇住佢整,又有人serve 你介紹個dish,好energetic 👍🏻因爲autumn所以見到枱上有樹葉既餅好artistic👍🏻食物前前後後有十幾樣野食,每一款都好靚好好味,而且好多都係同中國香港既材料fusion, 好有親切感,又好有驚喜。食到好滿足好飽👍🏻佢有埋首歌 係香港人都識鵝肝 北海道uni 香港賴尿蝦💓酸菜魚🌟🌟🌟🌟呢個好好味蛋整既餃子🌟🌟🌟🌟Signature dish 海參慢煮乳鴿和牛甜品好好味 好開胃💓💓💓💓似Creme burlee 💓💓💓💓飲左幾杯酒埋單4千幾蚊💓💓佢有wine paring 680@each 我地無叫到如果唔計酒 兩個人其實就3千到👍🏻👍🏻👍🏻

食物大多數都好食,事前沒有先看openrice評語,因此上每道菜都在視覺上覺得創意萬分,驚喜連連。而且有好多道菜式,食得好飽,覺得物有所值。cocktail pairing 幾好玩。多數都好飲。不過眼見大多數食客都選wine pairing.覺得最失望的是+$780 upgrade 的白松露意粉,waiter打開盒子時香氣四溢,但到食的時候就吃不出來任何香氣,我覺得吃本來menu上的那個Taiyouran egg會更好。我平日不太好fine dining, but this place is special. 覺得這地方可以在特別日子再訪。

I have no clue why this place is considered as a 1 star restaurant. It is very pretentious, tried to act fusion but failed unfortunately. More importantly, the dining atmosphere is far from a standard fine dining setting, it is so packed and you could clearly heard the conversation of the table beside you. The most unacceptable thing is they brought the first dish to my table while we were still looking at the wine list!!!!!!!! This is completely ridiculous and never encounter such terrible expe

More importantly, the dining atmosphere is far from a standard fine dining setting, it is so packed and you could clearly heard the conversation of the table beside you. The most unacceptable thing is they brought the first dish to my table while we were still looking at the wine list!!!!!!!! This is completely ridiculous and never encounter such terrible experience ever! Also, one of the waiter hit my chair accidentally, he knew about it but no apologies at all! If you are looking for real dining experience, DO NOT come here! It is overpriced for what they served! I am very regret that I made this wrong decision to spend my Saturday here.

食物上桌時不禁暗嘆廚師的用心!滿滿的黑松露配蛋黃醬放在剷子上,看起來時就像一幅小農地,好不有趣
薯條剛剛炸起固然香脆好吃,而舖在滿上還有滿滿的Parmesan cheese ,味道一流

我們這次想談談天所以坐到角落的位置,建議有興趣到訪的朋友可住到吧枱位置,看著調酒師調酒時還能與他們交流一番,他們都十分友善及健談的

花膠以西班牙Pil Pil醬汁調味,配以魚子醬、炸藜麥、韭菜末及蒜子增加口感層次,花膠鮮甜腍滑、口感粘稠😍,加上脆脆的藜麥及鹹鮮的魚子,口感豐富,好吃程度不容置疑,是我全晚的至愛💯!
*️⃣Silver Pomfret 酸菜魚
皮脆厚肉又結實嫩滑的銀䱽魚淋上酸辣湯汁,酸辣湯汁辣得恰到好處👌🏻,底下的酸菜中和口中辣味,好吃!

*️⃣遼參(沒圖)
海參是VEA的招牌菜,但chef每隔一段時間便會為這遼參換樣式,令回頭客不會厭悶,這次的皇帝蟹釀脆遼參以鮮甜蟹汁精華作調味,底下配上雞油蒸蛋白,最後噴上22年花雕,正宗色香味俱全。

這個鴿稱得上是我吃過最好吃的頭三位,半生熟度完美的鴿胸,色澤嫩紅卻不滲半點血水😱👍🏻,肉質豐美緊嫩😋。呈金黃色的鴿腿,賣相吸引,香口帶辣👅,惹味動人。

*️⃣甜品
最得我歡心莫過於那creme brûlée 配evaporated milk ice cream,好吃得我捨不得吃最後一口😭❤️,那香甜薄脆的焦糖脆面,綿綿細膩的燉蛋,配上那香甜清純的淡奶雪糕,那種驚豔難忘的味道仍留在我腦中揮之不去😚。

📝這次的menu把中國傳統菜式混入法式元素發揮得淋漓盡致👍🏻!Chef Vicky的廚藝確實又一次震驚了我🤭!

食我餐生日飯, 我遲到😛對間餐廳一無所知,我男朋友話係西式版omakase 😂😂😂一來到坐低就開始上菜了。呢個幾好味,silver pomfret fish 但配四川辣醬。好搞笑,sea cucumber 但噴左陳年花雕酒,幾特別。呢個menu冇,意粉上面加左white truffle,味道好清新。呢道菜叫drunken pigeon, 擺得幾靚。其實係xo醬炒飯😂,不過隔離個牛好食,勁薄。我地加左wine pairing, 試左7種酒,好似每人加800蚊, 但試7種酒都抵既。間餐廳環境好高級,而且bar檯對住成班星級廚師同調酒師,睇住距地認正工作覺得好型。我覺得食物,環境,服務都好好,但有dd貴。
