< Mutsumiya > is a new ramen shop in Taikoo Shing. They specialise in six unique ramen broth flavors, sweet, sour, bitter, spicy, salty and umami, taking your ramen to the next level!

This time, we tried [ Sweet ] and [ Sour ]. The "sweet" one features Saikyo miso soup, and the "sour" one features snapper soup with lemon which comes with clams. Never would have thought that a sour broth would pair well with ramen! A really unique ramen tasting experience.
Other flavors feature ingredients you may never have thought of in a bowl of ramen, like bitter gourd and green chilli!

香港不乏日本拉麵店;而本人大多吃的都是豚骨湯底、醬油湯底拉麵等
太古城這裡就有一家新開張的拉麵店《六味屋》,主打甜酸苦辣鹹鮮六款口味湯底的拉麵🍜 -
店子小小的,有數張餐桌,也有吧檯座位;這晚很快就坐滿了
店員服務親切,友善地歡迎客人、替客人掛起外衣、向客人介紹餐點
每樣餐點都非常吸引,所以我們除了兩碗拉麵外,還追加了數款配料 -
湯底方面,主要有較濃稠濃郁的味噌湯底,和較清澈味淡的清湯
店家選用了兩款拉麵來配搭兩款湯底,分別是札幌拉麵跟東京拉麵
札幌拉麵較粗身、有嚼勁、掛湯力高,所以適合配搭濃郁的味噌湯底
東京拉麵較幼身、滑順,適合配搭清湯
從湯底跟麵條的選擇都可以看得出店家的心思! -
京都風西京味噌拉麵 ($85)

我們味噌湯底跟清湯各點了一碗
首先是這碗「甜」的代表,湯底加入了西京味噌的拉麵
甜味甘美,配搭粗身的札幌拉麵,每一口都可以吸入湯底的濃郁甘香味道
搭配了炙燒鹿兒島豚肉叉燒、自家製金平牛蒡和紫薯脆片,十分豐富

Snapper soup with lemon ramen
接下來是主打「酸」的清湯拉麵
湯底以鯛魚湯搭配新鮮生榨檸檬汁,鮮甜配搭清新的酸味,意想不到的好吃呢
店員有提醒我們,檸檬浸泡一會兒就可以拿出來,不過我們滿喜歡那種酸味,所以就一直放著🤣
配搭著飽滿的蜆肉,無論是跟細膩的鯛魚湯,或是跟提鮮的檸檬酸味都非常搭配

三款叉燒,可以嚐到不同口感和滋味
我們最喜歡的是半脂肪半肉、邪惡的豚角煮叉燒😝 •
味蛋 Marinated egg ($15)
吃拉麵怎麼可以不配上一顆溏心蛋
原顆奉上,一切開,就看到晶瑩剔透的半熟蛋黃
蛋很入味,具醬油香味,也有濃郁蛋香味
