參考過上兩期的飲食男女,內頁介紹過的一所意大利餐廳原來是由來自意大利南部的大廚所煮理。從雜誌上了解到大廚不但在郵輪及家鄉的海鮮餐廳以下廚了十數年之久,還因家族三代都是以捕魚維生,因此對他所選取及烹調海鮮食材都暫且投以信心一票。個人較喜歡追求傳統口味多於現今的Fusion菜, 是晚本來打算與太太前往麼地道一間私房菜的,但那處的電話久久未有人接聽,在訂不到位子的倩況下,便即時轉軚來到這間位於尖東兼且餐廳名字獨特的Only Buonasera。在下午時段已致電餐廳預約七時半,但比預約時間早了十分鐘。探頭四處張望餐廳四周環境,約有千多平方尺的地方卻空無一人。突然有種不詳預感,約了太太七時半在餐廳正門等候,太太還沒到達,忽然閃過是否應另覓它處的念頭,但最後還是決定選擇在這裡晚膳。既然仿似包場,又見其它食友們在這間餐廳拍照出來的食物相都是暗淡模糊,效果不佳的。那就找個光猛的位子坐下,方便拍出清晰的照片吧! 餐廳環境無論是海洋顏式的牆身、貝殼形狀的燈罩或是懸掛在天花上的魚網吊飾,全都充份反影了這間意大利餐廳的強項菜色及店主的出身背景。很好! 難得與太太能在免費包場的環境下去響受一頓意大利晚餐,想真一

首先向侍應取來餐牌,當我正與太太研究著吃些甚麼時,侍應極速地給我們遞上小食。兩種小食包括蕃茄多士及酥炸矮瓜。這是否南意傳統小吃我可不太清楚,但它們所採用的是鮮甜多汁的鮮茄這點是無可置疑的。鮮茄內亦嚐到少許香草及胡椒味,而那個酥炸茄子體積很細少,極難在本地超市買得到。整隻茄子尤其莖部位置炸得乾身香脆,而茄子內相對較軟稔,亦有點香口的鹹味。
以下是我倆決定點選的菜色:
雜菜湯:湯料頗為豐富,當中包括西蘭花、甘筍、洋蔥、蘑菇、蕃茄及美國黃豆,然後再在湯面上灑上胡椒及芝士粉。湯料營養豐富,沒中式蘿宋湯的茄膏及濃味,感覺是家庭式的無添加色素營養湯,反而灑上胡椒及芝士粉後的雜菜湯更覺清淡中帶來一點味兒,質感豐富非常。
沙拉菜:像吃著芝味無窮的海剎沙拉,生菜新鮮,雖然烤過的燒雞味道濃烈,但可惜雞肉燒過了火喉,鞋口如火雞肉的質感。
蒸海鱸:侍應極力推介此一招牌菜,但自已一向認為西餐的海鱸大都烹過了火喉,但在最終還是對家族三代都是以捕魚為生的大廚所推介的招牌菜再投以信心一票。果然不負所望,一嚐便知海鱸是新鮮貨式,否則餐廳絕不會膽敢用清蒸方式來奉上此度招牌推介。去了皮的魚肉鮮滑無比,配上由清純橄欖油及香草製作之crazy sauce感覺清新,味道絕不複雜花巧,魚肉原味亦不會被醬汁所蓋過,是完全原汁原味地活現在味覺感觀的世界裡。
意大利海鮮飯:海鮮飯所用的海鮮材料,照餐廳所描述均是入口自意大利,除了蜆肉例外。飯粒的軟硬程度相信是為迎合本地人口味而特意烹調。海鮮飯除帶有蕃茄的微酸外,配菜還有基本的海鮮如蝦仁、青口、蜆、八爪魚外,另外還加入橄欖粒、黃綠青椒,再用牛肝菌汁煮成。雖然是入口意大利海鮮,但可惜鮮味卻欠奉,除了青口是例外的,比較起來飯粒較海鮮烹調得出息,那是因為每棵飯粒充滿著野菌的香氣。
吃至最後,當然是要嚐嚐由意大利廚師所炮製的意式甜品,我們最後選擇了一個homemade甜品二人set,比較各款甜品來得較為經濟實惠。
Tiramisu:香滑軟綿的口感外,那四層的T iramisu是傳統製法,是依足次序層次來製成的,是清晰鮮明,不像有些港式Tiramisu層次求其亂來。奶油味道香甜,酒香味濃郁,唯獨芝士味不太明顯。
朱古力慕絲:濃滑細緻如絲的口感,濃郁甜膩而沒帶半點兒苦味,教人難以抗拒的朱古力令齒夾留香,歷久不散。
奶凍配士多啤利汁:奶味非常濃郁,兼且滑溜溜,比3.6北海道的紙盒裝紙品奶還要來得濃郁。是全脂奶的味道。它沒有朱古力慕絲的甜膩,單靠多啤利鮮果醬汁,便能令濃郁的奶凍增添一種酸酸甜甜的果香,卻一點也沒搶去奶的原始味道。而旁邊放有一種在香港很難找到不知道名稱的意大利果,但可惜我並不欣賞,此意大利果超多核且只是"得個甜字",並沒有令人一試留下任何味道的記憶,意想不到的是侍應對我們說到此意大利果的果核可吞下肚,幹麼? 果核不算細粒啊!
是次所挑選的菜色除了飯粒是因應本地人口味外,其它菜色口味地道正宗,選材亦不媽乎,只是各海鮮的新鮮程度各有參差,但總算能吃到南部意大利廚師烹調出來的意式風味,也算是不枉此行吧!
