豬腩經 48 小時慢煮,配上麵包屑同藜麥,形成出外脆內軟,強烈對比嘅質感。同時,伴上白酒蘋果汁,帶出甜中帶酸嘅味道,同豬腩嘅味道好襯,值得一試。
The pork belly is slow-cooked with 48 hours, topped with breadcrumb and quinoa, that gives a contrasting crispy surface and a soft inner part. It is served with white-wine mulled apple puree, that escalates the sweetness and sourness, and matches well with the taste of the pork belly.

雲呢拿白松露雪糕配上白松露打成嘅幕斯,最後撒上乾士多啤梨碎。白松露嘅味道極為突出,幕斯嘅空氣感十足,而且用上雲呢拿,唔會蓋過白松露嘅味道。乾士多啤梨碎為雪糕帶少量酸味,增添層次感。整體而言,依到嘅菜式令人感覺各具特色,會為人帶來驚喜,好值得一試。
Vanilla white truffle gelato is served together with white truffle mousse, topped with freeze-dried strawberries. The flavour of white truffle is extremely outstanding, while the mousse is airy and fluffy. The taste from vanilla would not cover the taste of white truffle. With the add of freeze-dried strawberries, it brings a small amount of sourness that enhances the layering. Overall, the whole meal brings us dishes with surprising characteristics. It definitely deserves your money.
