仙台:

由一支公要自己找地方食飯, 到太太來香港定居至今, 已去過一杯屋很多次。這店一向主打仙台的菜色, 例如牛舌, 不同類型的牛類菜色及特色鍋物等。亦有很多炭燒串燒供應。燒物整體不錯。我們覺得【一杯屋】比附近的燒鳥店如【一番】,【小平津】和【備長】處理得好。

環境: 這店環境與本大廈其他食肆的格局相似。有很多吧枱。燈光柔和。以暖色木為主。即使坐吧枱附近,通風亦合理。



Ippaiya:

I've been here many many times. I think this place is better than Ichiban and Bicho nearby. The decor of this place is similar to other restaurants in the same building. Dimly lit and rather spacious. Ventilation at the counter seats wasn't perfect but acceptable.



免治雞肉串:沒有附上蛋汁但內有兩隻鵪𪂹蛋和香草。肉質嫩滑有肉汁。時間掌握得很好。推介!

Tsukune : No egg sauce in sight. However, there were two quail eggs inside the minced chicken meat mixed with a bit of herbs, possibly oregano. Better than Mutekiya at Wan Chai or TST. Tasty, tender chicken meat. Recommended!




洋蔥:師傅選擇了汁燒。有點淋。燒久一點更好。
露筍:不夠鮮。麻麻。
煙肉金菇卷:肉夠厚夠味但燒香一點更好。金菇𣎴錯。

燒飯團:(不在相內) 外香內軟。配上明太子的咸香。非常好。推介!

Onions: Grilled with tare (sweet, thick Japanese soy based sauce used for Yakitori.) A bit too soggy for my liking. The taste was fine but would greatly benefit from longer grilling time and a bit of shredded bonito.
Asparagus: This was just average. The asparagus was not fresh enough.
Enoki bacon: Good. The bacon was thick cut and flavourful. However, it could be grilled a bit longer though.

Yaki onigiri (not in photo): Nicely grilled with some meitaigo inside the rice "boll" (sic) . Crispy outside and soft, aromatic rice inside. Very good. Recommended!




泡菜豆腐:泡菜蒜味醋味平衡得宜,亦很爽口。豆腐不是幼滑而是較為粗磨一點的,可能是韓式的。豆味香濃。

Kimchi Tofu: Good kimchi with a balanced taste of garlic and vinegar. Slightly grainy tofu with good soy bean taste.




刺身香港供應的地方不多。除了專門店【一芳】外(竟要3日前預訂!),【京笹】和【富士之幸】好像有供應。點了一客,肉質可以但未完全解涷。【一芳】始終是專門店, 處理得純熟一點。但洋蔥味道很出, 與雞肉,山葵和辣椒同吃能大大提升食味。或可一試。


吉列:據我所知, 香港並沒有很多供應日式吉列的地方 (我的意思是用麵包糠包著炸物的串燒Kushi, 與一塊過沒串著的Tongkatsu 或天婦羅不同。) 試了吉列五花腩. 覺得炸槳鬆化𣎴油很正宗。豬有豬味,肉質不錯。推介!

Chicken sashimi: This was not defrosted enough. Ippou,being the specialist in this area, fared better (you're supposed to book 3 days beforehand for chicken sashimi at Ippou as they import the sashimi grade chicken from Japan Σ(゚д゚lll). However, the onions were very very flavourful. I strongly suggest eating the chicken together with the onions, spring onions, a bit of toothpaste wasabi (!) and chopped chili. Worth a try.


Katsu Pork (kushi yaki): Very good! Aromatic pork taste. It's pretty hard to get kushi in Hong Kong. The breadcrumbs batter was crispy and not too oily. Recommended. $38

What is noteworthy is that they have a whole page of kushi yaki . Not cheap, about $36 per kushi but at least much more than many other Japanese restaurants in Hong Kong.

Essentially, the difference between kushi and tempura is the batter used. Kushi is breadcrumbs whereas tempura is flour. The texture is of course completely different.



劍先魷魚刺身(兩食):這個是較為新的菜式。我們吃了兩次都很滿意魷魚的鮮度。有口感之餘有點甘甜。吃完魷魚身後可以選擇將頭及觸手燒或天婦羅形式處理。這次選了天婦羅。炸漿很脆但不太算是天婦羅, 似點了蛋來炸多過天婦羅。另一次點了燒的亦不錯。

Ika sashimi: Talking about tempura, there is an interesting sashimi dish here. After you consume the main body of the spear squid sashimi, you could choose to have the head and tentacles grilled or made into tempura.
The squid sashimi itself was delicious. It had a very sweet aftertaste, which is normal for this type of ika.

We've tried the grilled version and the tempura version. The tempura was fairly crunchy. It's not really an orthodox type of tempura but more similar to squid dipped in egg and then fried. Not exceptional but no complaints. Having it grilled might be better.



味噌南蛮漬け: 重口味。用黃豆味及酒味重的麵豉來醃青椒絲。十分適合送酒!

Miso Namban: Chopped green chili marinated in dark colored miso. Strong flavoured otsumami ( good with Sochu)

日本甲州白酒:據稱使用日本原種葡萄來釀製的白酒。味道比一般 Riesling Dry 一點。 HK$568 不算特別抵飲。
除紅白酒和Sapporo生啤外. 新加了很多款燒酌和清酒!

隱之藏:帶甜。比一般燒酎杰身,濃郁帶甜。比海之童易入口。
海之童: 味道強一點。
Ichigo super: 易入口。確比一般的ICHIGO 普通版順喉得多

Drinks selections:
Japan white wine: $568~ medium bodied . Dry. Not bad since we didn't get a hangover afterwards.

Kaido: also good. Slightly stronger than Kaku no Kura. Fairly deep and intense.
Iichigo super : Easy to drink. Lighter and smoother than normal Iichigo. 。
Kakushi kura: Very rich, sweet and easy to drink as far as Sochus are concerned. Almost tasted like the Okinawa awamori Kura. I suggest just adding ice.



服務:

各位待應及大廚都很有禮貌和親切。好像沒有經理但是各人穩守崗位,很有效率。值得讚賞。

Service:

Very polite and friendly service. Surprisingly, there didn't seem to be a designated manager but everyone seemed motivated and knew what they should be doing.



總結:

燒物整體不錯。
其他如鍋物, 和魷魚刺身都很不錯。
酒水選擇亦多。
不妨一試!

Conclusion:

Decent yakitori and cooked food from Sendai and other areas in the Miyagi prefecture.
Many different types of sake, sochu and wine to choose from;
Friendly service, comfy decor.
Recommended!

海闊

日本大地震,加上海嘯和核災難發生, 差不多整個仙台和石卷巿被海嘯殱滅。

記憶中她有一段時間的貨源斷了一段時間,
加上因輻射關係, 客源亦斷了。
【一杯屋】主要供應宮城県,特別是仙台巿的食品。很替她擔心。

認識一位日本空姐朋友,日本海嘯時她在仙台的小型機場與乘客剛下機。
僅僅剛來得及在巨浪殺到前帶一眾乘客逃住4,5層高的大廈。
她親眼目睹體積龐大的飛機被沖走,
亦看見激流中有很多仍然活生生的人在掙扎...

另一位日本朋友,事發時在東京。
她的家人則在仙台...
因無線網絡停頓, 無法取得聯繫。即使網絡恢復了之後, 家人沓無音訉,聯絡不上。
她當時十分激動, 不停嚷著要回仙台...

天空:

主打的料理貨源斷了,加上客人稀小,【一杯屋】可能會支持不著而倒閉或轉手買其他食品...
但是【一杯屋】在災難後仍沒有放棄,仍然努力經營,
除仙台牛舌外亦大大革新了餐牌,
多了宮崎県其他有特色的地方菜式。
酒水選擇多了很多。服務亦比以前更好!

這樣經得起風浪, 值得佩服!

第一位日本朋友在接近心理治療後,選擇繼續做地勤人員,
雖然她因創傷後遺症, 仍然未能成為在機艙服務員,
但她仍然希望在治療完畢後繼續翱翔天際,面向籃天!

另一位仙台的朋友,十分能喝。
在事發後,在仍然有強烈餘震的數天,我「勇敢」的太太捉了她去在地庫的居酒屋吃燒鳥和喝熱清酒,
目的是令她平伏心情,防止她回仙台!
(這當然嚇壞了身在香港的我!勇敢與魯妄有時很難分辨...)
朋友整間住所差不多全被沖走。幸好她的家人無恙。
但她們的鄰居和朋友就沒有那麼好運了...

她仍然堅強地收拾心情。保持正面及陽光氣息。
她的男友不斷支持她,一起共患難。最後打動了芳心。
剛剛結了婚!

還記得在災難發生時,
很多日本人奮不顧身協助言語不通的香港人和其他外國国民嗎?
如災難在香港或歐美發生又如何呢?會否協助同胞和外國人?

大家都求生存,求衣食豐足。
所謂「搵食」就是核心價值。這是跨種族,國界和文化的。
大家不能摒棄偏見,和其他民族一同和平搵食,開飯嗎?

人有旦夕之禍福。生命十分脆弱。
如被執著,偏見,忿怒,衰傷,恐懼等負面情緒佔據著,
實在有點浪費寶貴的生命。

看來只有堅強,正面地活才不枉此行。

長渕 剛先生原先到達石卷市的時侯, 認為那並不是一個適合唱歌的場合,
