The highlights of the chef’s selection is certainly the 3 great variations of sea urchin dishes:
10-layered Sea Urchin Cup – their signature dish that has layers of seared white baits, caviar, Hokkaido sea urchin, Okinawan sea grape, toro, salmon roe, prawn and crab meat. It is a cup of pure delicacy – fresh, high quality ingredients and with layers of unque flavours that go so well together.
Tuna belly and sea urchin roll – the pink, fatty belly meat from Tuna and the rich buttery texture, with a sweet briny flavour from the sea urchin sitting on the top of the roll. This roll is divine.
