Since a friend who had read one of my reviews about Hyacinth Dessert was in Wong Tai Sin area, I decided it would be a great idea to bring her to this place. We of course ordered desserts, but since I have always wanted to try salty things at Hyacinth, we also had French fries. The fries had melted cheese and salt on top. This snack was pretty good. Moisture from the hot cheese complimented the fries well. Too bad we did not mix the cheese and the fries well enough. Fries at the bottom lacked cheese – they were dry, hard and salty. If we order the same snack next time, we will have to be fast since cheese cools down real quick. When it came to the desserts, I found the Green Bean Soup too thick. It was too much of a paste. I would have preferred it to be thinner. Otherwise, the sweetness was just right: very refreshing.

As for my friend's Red Bean Crystal Herb Jelly, I found it fun. It was an innovative dessert. With each bite, we had a sort of 'orchestra' inside the mouth. The different textures from the floury and soft red bean, the springy herb jelly, and the popping and exploding crystals were the different 'instruments' that acted together to give a harmony.
