Went to Quemo for dinner which is on the 5th floor of QRE plaza.Normally when you have Iberico Ham you just eat what you are given but here you can choose and try different parts of the ham.Different parts taste different.Started off with Iberico Ham paired with a sharp tasting CAVA.The ham tastes strongest nearer the bottom because of gravity which is the bit I like but most people will probably like the part just before the end where it is flavourful but not too strong.After having the ham, we

After having the ham, we had the oysters, one was dressed in Gin foam which had a sweet aftertaste to it and makes the oyster really silky and seals in the flavour.
Next, we had a beautiful seabass paired with velvety mash that had pieces of green beans in it contrasted by a crunch.
The pork terrine was different because it was pulled meat with a piece of crispy pork skin on top.
My favourite was the coconut and ginger mousse and catalan cream which was light and airy.
