I order the Nouko Shoyu Chicken Soup Ramen ($88), which features the famous white collagen soup that this ramen chain is known for. I add an egg ($12) and chicken meatballs ($10).

The soup is indeed thick. It coats the thin and straight ramen noodles, which maintain their chewiness. The serving is average, and although it is a rich dish thanks to the collagen, I am left craving a little more. There are two large pieces of chicken thigh meat, rolled up like chashu and finished with a blowtorch. The egg is jammy and has absorbed the marinade well. The meatballs are soft and tender, and taste ok, but do not really add much to the ramen. Lastly, the other toppings include fresh spring onion, chopped white onion, and one piece of dried seaweed. The onions bring freshness and helps to cut through the thick soup.

This style of ramen is a decent version of chicken ramen. I would come back to this place if I needed a break from the bustling city outside, because it really is a chill place to quietly enjoy your noodles. If you close your eyes, you might even imagine that you are sitting in a little ramen shop, somewhere in Japan.
