A dish full of surprises! First is the charred avocado dusted with charred leek cleverly disguised behind the white crisp creating such a contrast. Cutting into it revealed the lava center with the Peruvian green sauce matched perfectly with the avocado both visually and flavor-wise. The chill refreshing sauce filled with tomato and herbs brought such refreshing and lifting flavor. A smart and playful way of cooking avo!

Soft shell crab perfectly crispy, and sauce once again triumphed, great depth of flavor with just the right spice.

The use of banana leaves and cooking the fish whole, does remind me of southeast asian cuisine. Yet the flavor profile here is completely new and interesting, not only did the sauce stole the show with its vibrant pink color, it gives such depth of flavor where you get good balance between sweet, spicy and acidity. Peru is renowned for their countless variety of corns, choclo is one of them and (they’re big!) provided awesome texture.

This skewer got a punchy flavor from the salsa pimiento and the chicken remained tender and nicely caramelized.
