The new list of Aperol based brunch cocktails at Aqua Spirit is fresh and light yet nothing short of seductive. I had a very hard time not to order seconds, but I limited myself to testing only four of them to ensure my objective judgment wouldn't be clouded by the potency of these amazing drinks. I started with the "Mathilde" - a concoction of sake, Aperol, yuzu & mulberry topped with prosecco and I noticed a hint of sweet basil. While I'm not normally a friend of sweet drinks, the sweetness of this drink really worked for me. After the understated presentation of this simple red elixir in a champagne flute, the taste sensation comes as a complete surprise, and a pleasant one at that. I can really see this becoming a favourite with the ladies, not only at lunchtime!
Next I had the "Benito", with Aperol, lime cordial, mint, fresh raspberries and prosecco. This drink is so refreshing, it is easy to forget there is alcohol in it. Served on the rocks, it sure cools you done in no time. The fresh raspberry give a nice fruity flavour without being overpowering.
Then I tried the "Rising Sun", a drink as pretty as its name. The seductive mixture consisted of Aperol, yuzu syrup, honey water and egg white and was served with an intricately cut orange zest and a bouquet of mint. Very elegant, seductive and it sure goes down a treat, being neither too sweet nor to strong.
Last but most definitely not least was the "Exotica" and this was my absolute favourite. The unusual combination of Aperol, elderflower, mint, soda and prosecco sounds harmless enough but it certainly is flavourful and totally addictive. It tastes a lot more alcoholic than it is, making it a real "fun" drink to have without regrets. It seems to me the perfect drink for those who'd like to party but want to keep a clear head.
