Beef was tenderized with baking soda, soft but did not lose its texture. Beef tendons were very flavorful and melted in my mouth.
Also tried their signature butterfly belly. Very tender like pork cooked in double-stewed soup. This part is a combination of meat and tendons so the texture is soft and like jelly. Delicious.
Seems like it's a family-run restaurant judging by the service and passionate attitude of the people who work there.
