This beautiful little treat was made with Earl Grey Sponge, Peach Mousse, Lychee Jelly, Fresh Peach and Almond Biscuit. The dome-like appearance was gorgeous with glossy shiny glaze, topped with slices of fresh green apple and was scattered with few tiny gold flakes that provided an extravagant touch to the cake, it’s totally a delicious work of art.

The Lychee Blush was formed with Vanilla Sponge, Raspberry and Lychee Mousse with Fresh Lychee. The cake was packed full of raspberry and Lychee flavour, with a perfect ratio of filling that balance the sweet and tangy. To my surprise, when I dig in the middle of the cake, a whole fresh lychee was hidden inside, the natural sweetness complemented the cake very well.
