I have lived in Phuket for 2 years and am very picky when it comes to thai food wherever I am in the world. In hk I usually prefer to stick to the more local thai restaurants around lockhart road in wanchai or on south wall road in kowloon city. I was very pleasantly surprised to dine at Koh Thai after hearing that the head chef used to cook for the royal family and I was not disappointed. Sure it may be true that a few dishes may be served in a manner suitable to international standards but in this case I would not necessarily say that such was a crime as the presentation was very pleasing to the eye and is actually quite refined. If there was one thing I must highlight, it is that the flavors on every dish are exceptional, credits to outstandingly fresh herbs as well as the different unique dressings and pastes that are prepared in house. I would also say that the chefs are very conscious of the amount of flavor that goes into every dish, I was able to savor sweet, spicy and sour all in perfect harmony without one exceeding another. This balance in my opinion is what separates thai food from other SE cuisines. Paired with a very relaxing and hip playlist, the decor is stylish and comfortable and I was also pleased to be able to sit at one of the inside tables and occasionally gaze at the chefs doing their thing through the open kitchen concept, I am very much looking forward to my next return.
