After knowing that it’s concept: a Journey through a day in Hong Kong, I immediately made a booking to give it a try.Created during lockdown, this cocktail omakase is definitely a treat and very worth trying the Journey. Created during lockdown, this cocktail omakase is definitely a treat and very worth trying the Journey.

At 08:00, we started off with Yum Cha. The carbonated jasmine tea with Chivas and fruits provided a refreshing start, paired with a Chrysanthemum Puer Tea Jelly.
At 12:00, a classic Nothing yet tasted like everything. Presented two ways and interestingly tasted different. I personally prefer the cold soup as the melon and Parma ham were such a great combo with the Nothing.
At 19:00, the drunken sea snail was so well marinated that I can probably have a whole box! They even had the innards removed. The alcohol in the marinate is not overpowering at all. Loved it. Would love to have the chance to try the mother’s plum wine but the current one is still a good pairing.
At 22:00, the strongest glass of the night is Bo Jai Fan. With Shitake Sous Vide Gin, Chinese Preserved Sausage Fat Washed Amaro Montenegro and Elderflower. You read it correctly, it’s mushroom and Chinese sausage which are iconic ingredients to a classic 煲仔飯! They even paired it with rice cracker for the whole experience. The level of creativity!
At 22:00, milk tea ice cream mixed with Chivas, topped with Truffle Caviar. The ice cream was silky smooth and I can’t believe it’s made in house.
At 25:00, the classic double boiled soup with a shot on the side. Truly warming as the final touch.
Please don’t miss out on the Journey as it’s very worth the experience. I can’t wait to go back again before it ends in end of September.
