I have heard the elderly speak of the legendary "Pork Fat Trimming Noodles" (豬油渣面) which used to be a very popular food in Hong Kong many many years, if not decades, ago. With healthy diets becoming more of a trend now, it is now quite rare to be finding restaurants making this noodle. I ordered the spicy version here at "Heng Tat" Restaurant.The noodles (i picked vermecelli) came with a variety of toppings, including pork fat trimmings, shitake mushrooms, ham, preserved spicy vegetables (冬菜)
