Been here for several times and I often recommended people to come here for their signature noodles. Quality has been stable upon my visits. The made in Taiwan noodle was designed to be tried in two-ways. First to be eaten as noodle mixed with scallion sauce as the way it's served. Then there is a pot with the Ox bone broth next to it, which was made with apple to add some sweetness. You can pour the soup into the noodle or into the small bowl to simply try the soup. The noodle was super good in both ways, especially after mixing with the soup as the broth was rich. Beef Tripe and Shank were both tender and absorbed the flavor from the marinade sauce.

Tbh, it's quite a small portion but you can tell the green were carefully selected with the youngest part. Served with soy sauce, simple but good.
