Overall comment - chef was pretty generous with oil,. In fact, a little over for good quality ingredients.

A4 Wagyu beef (sliced) was cooked nicely, while the diced version was overly oily

The amount of egg that was used in the Wagyu beef fried rice was slightly over. The chef cooked 3 bowls of rice in total (1 portion of the customer on another table) and used 3 eggs. Would recommend using 2 eggs or best, 2.5 eggs instead. Having added the eggs, the rice became very moist and required a lot time to cook. Some of the rice was overcooked and cracked opened.
Flavour was good though. Overall rating 7 / 10.

Assorted tempura platter was nice. Overall rating 8 / 10.

The half lobster was a TOTAL DISAPPOINTMENT. Some facts:
1. Only 4 pieces were being served, which costs HK$490 + 10%
2. As part of the dietary requirement, we asked for a 100% well done on the beef and lobster. The chef cooked the lobster for a little while, placing it back on the tray where the raw lobster was originally presented, before cooking it again. Two primary issues:
(a) The chef has no idea of what food poisoning means. Placing slightly cooked items on a tray that carried raw food is one of the biggest mistakes for any chef, despite it will be cooked thoroughly later on.
(b) The refire process was not ideal for seafood of this quality. I was unsure why the lobster was being cooked "twice".
3. The lobster pâté (or lobster paste) was being removed while it was being prepared by the kitchen staff. I later on found out that this is a standard process. If I ordered a full lobster, the pâté will also be removed as well. This is a very strange practice - for both asian and western cuisine, when the pâté is one of most favourable and flavourable part of the lobster.
4. The shell - including the head was being placed aside by the chef. It was not being offered as part of the serving.

It was only when I asked about the lobster head, then I was being "offered" that a lobster miso soup can be served (without telling the customer that this is chargeable). When I received the soup, there was a lot of flesh left in the head.

When I made further queries with the manager, she reiterated that as part of the presentation:
1. the lobster head will not be presented on the plate
2. the lobster pâté will be used to create the sauce for the plate and will not be offered to the customer.

What I found it most bizarre was, not only Ta-ke tries to pursue a rather unusual route to present its expensive dishes, but the lack of respect to its customers by not offering them the choice. I was even being presented the line "we have just opened for 6 months" as part of the explanation, which triggered me to ask - "Is Ta-ke being owned by Japanese or non-Japanese?". The answer was clearly the latter.

Having tried Japanese food around the world for many years, not once I have experienced a restaurant that would re-fire a lobster this way, remove the pâté and not serving the head as part of the meal. What made it worse was the weak justification from the manager and the restaurant's expectations from its customers with regards to it's rather "short" period of operation since opening.

As part of the follow up on the following day, the Manager agreed to waive the entire bill, which I refused because I did consume the food. We came to an agreement to remove the lobster from the bill.

Overall rating for lobster - 5 / 10 (the 4 "generous" pieces were good).

A rather terrible experience for a birthday treat.

The Manager should also ask her staff to pick up their feet when they walk - it was terrible to hear the way they drag their flip-flops around the restaurant.

Overall experience rating - 5.5 / 10
