Came to ALTIRA CASINO & HOTEL for Dinner the night right before we went on to try Tempura Tenmasa, my review of which can be found here: " http://www.openrice.com/restaurant/sr2.htm?shopid=24189 " . Our choice at the old Crown Casino site was to be 帝影樓 Ying, the 2009 Michelin 1 Star Chinese Restaurant, which has subsequently lost its star in the 2010 Guide. This meal was actually from around 14 months ago during mid 2009, so its been a long while ago. *********************************

西班牙黑豚燒肉 & 叉燒 (Roast Iberian Pork and Char Siu) :
The Roast Pork is pretty ok but unfortunately, it has big competition in Macau especially when compared to the version at 金殿堂 Imperial Court, which was impeccable. The Char Siu here was ok too and tender, but it carried too much of a 南乳 sauce influence so was slightly too savory and without much honey glaze. Could be better. 3/5
椰香龍蝦卷 (Lobster and Coconut Roll) :
Their signature entree ~ this was very well done as the seafood and lobster pieces inside are chunky and tasted as its advert. The slight coconutty sauce inside wasn't overdone in that fakish manner either, nice and creamy. Topped with fried pearl leaves and imitation saffron pistils. 5/5
山渣汁蝦仁鍋粑 (Fried Rice Crisp with Shrimps & Hawthorn Sauce) :
The Rice Crisps are evenly fried. The sauce was actually really good. Although most hawthorn sauces are partially made of only 'hawthorn candies', then topped with some real hawthorn berries in the end, this was enjoyable and together with blocks of real pineapples and not too crystallized prawns its was finished in no time. 4.5/5
京燒和牛面肉 (Braised Wagyu Beef Cheek with Veggies) :
I didn't expect this dish to be executed so well. Let's start with the baby Boy Choy's first, which were cooked so well ~ it retained its original flavours completely yet somehow got enhanced in the process. I have no idea how the chef cooked these veggies so well. The wagyu beef cheek is slow cooked, it was tender but not overly so, the sauce was rich but just so well balanced. Topped with some fried onions I believe? I don't know. This dish isn't impressive in Design, it probably isn't even very Cantonese but more like a Chinatown dish. But it was the execution of it which was so perfect, I'm still in awe of working out how its cooked so well. 5/5

OVERALL:
What's impressive about YING's at night is not its menu, which is kind of boring if you ask me. Its more about simple dishes executed really right. However for an ex-Michelin 1 Star Restaurant (it still was when we visited), it was actually quite cheap. Most dishes running in the $6X-8X price range, some obviously over $100 if you go upscale. You also get 10% discount if you're an Altira Club member.
NOTE: It seems like lunch is not very good here going by a few people's comments. I guess Aurora probably suffers the same problem as lunch is not that impressive for me (no reviews yet). I will certainly come back to dinner again 1 night to give it another try and see if it has dropped off in performance, and will comment again then.
