近年來内地很多高端食肆紛紛進入香江市場,在此段時間來說可是意義非凡!而膽敢在夜場聖地中環蘭桂坊地標加州大廈進駐的,其實力更是不容置疑--朝天門,頭頂多個光環:內地十大火鍋品牌之一,1935年開張至今全球已有近千家分店,其炒製火鍋底料工藝被列入重慶非遺文化技藝等等;且把鏡頭拉回餐廳這邊,其門面裝潢已氣派非凡,在朝天門牌匾下,兩邊紅牆面上裝嵌為數眾多的門釘,一派王公貴胄宅院架勢(帝級是每邊81顆);由於大廈樓底頗高,從而令室內的佈置可塑性極大,餐廳採用高貴典雅的宮廷風格設計,更有不同面積的包房可預訂;如果是臨街的包房對著街景已令人心情開朗,再加上每間包房內有侍應生全天候侍候,尊貴服務油然而生!而房內裡更佈置著整套靚聲唱K系統,一邊涮火鍋一邊唱K,十足的娛樂性!至於食物食材方面,選擇更是多姿多采!據餐廳經理介紹,其標榜極度新鮮的食材,在原產地到港的運輸過程中採用新穎方法來確保其鮮度!鍋底方面是用傳熱快的銅鍋打造,比較特別的可選非遺三味鍋,甚至四式湯底,而不止於坊間流行的單式/鴛鴦/九格鍋底;好友點了非遺三味鍋,湯底分別是麻辣火鍋/黑菌湯/豬肚雞湯;經大家商議一番後,陸續點了食物食材;食肆現時

整個火鍋盛宴下來,服務方面--由食客戴上圍裙來饗宴,到經理加湯時用擋板遮蓋來防止湯汁彈射,再到侍應生的隨時侍候,很多細節位都被注重,令人頓生好感!
無論在餐具或食物食材造型方面,都極富心思,美侖美奐得讓人印象深刻!而食材質素之高,加上都是極其新鮮;期間更體會到將内地與香港的飲食細節文化融會貫通,堪稱完美了,更令人愛了,稱得上是這些年來火鍋界的天花板!
